  • 500g* Tipo 00 or all-purpose flour (3 ⅓ cups)
  • 8 grams Instant or active dry yeast (2 teaspoons)
  • 7 grams kosher salt (1 teaspoon)
  • 338 grams Hot water (1 ¼ cup + 3 tablespoons)
  • 13 grams olive oil (1 tbsp)

  1. Mix the flour, salt and yeast in a bowl or the bowl of your food processor. Stir to combine. Add water and olive oil and stir until a soft dough forms. Turn the dough out onto a floured surface.
  2. Knead the dough by pressing it with the base of your palm, then shape it into a ball. Continue kneading for 8 minutes, until dough is fluffy and has a smooth, stretchy surface. If the dough is very sticky, add a little flour while kneading. Alternatively: Attach the dough hook to a stand mixer and start the mixer on medium-low speed, then knead for 8 minutes.
  3. After kneading, divide the dough into 3 equal pieces. With floured hands, gently form each half into a ball (spherical shape) by folding the dough over itself. Place each ball on a floured work surface and brush the dough with a little olive oil to keep it moist. Cover each ball with a damp towel and let rise until doubled in size, about 45 minutes to 1 hour.
  4. The dough can be used immediately or frozen (skip to step 5). However, for BEST flavor, transfer batter to separate sealed containers large enough for batter to double again and refrigerate for 2-3 days. On the day of making the pizza, remove the dough from the pans, place on a lightly floured surface covered with a towel and allow to come to room temperature for 30 to 45 minutes before stretching.
  5. To freeze pizza dough, place each ball in a resealable plastic bag. Suck out the excess air with a straw, then seal the bag. Write the date the dough was made on the outside of the bag with a permanent marker. Freeze up to 3 months.
  6. To thaw pizza dough, remove the dough from the freezer and place in the refrigerator for 24 hours before using. On the day of making the pizza, remove the dough from the pans, place on a lightly floured surface covered with a towel and allow to come to room temperature for 30 to 45 minutes before stretching.
