Step 1

Cut the fennel leaves with a large chef’s knife. (You can use the steaming portions as garnish if you like.)

Cut off the root end of the fennel.

Remove any tough outer layers from the fennel and discard.

Dice the fennel, cut slices parallel to the end of the root, leaving space at the end for the slices to stick. (Make the slices wider for cubes and narrower for chopped/small cubes.) Then turn the fennel and slice the slices the other way, following the curve of the fennel. When you’ve cut halfway through, turn the fennel over onto the flat cut side and continue slicing. When you get to the end that didn’t have slices, give it a few more chops. Watch the video of this part!
