This recipe for homemade Italian dressing is incredibly easy. The flavor is zesty and bright, full of garlic, white wine vinegar and balanced with hints of maple syrup. Then it is naturally blended with extra virgin olive oil to form a creamy emulsion. We also added a hint of Dijon mustard to give it a little extra pizzazz; it also helps with emulsion. In addition, the dried herbs: basil, thyme and oregano, which bring an earthy note.

To create an emulsion for this homemade Italian dressing recipe, simply whip it by hand. Here are some tips for the perfect consistency:

  • Use a medium sized bowl. To thoroughly incorporate the oil and vinegar, use a medium-sized bowl to allow enough agitation. Trust us, we’ve made it in small bowls before and it’s almost impossible to mix the oil and vinegar together!
  • Gradually add the olive oil. We usually add it in, tablespoon at a time, and whisk until the oil is fully incorporated.
  • use mustard. Don’t leave it aside! Dijon mustard also helps form and lock in the emulsion. We’ve used this technique in our other dressing recipes, like our classic dressing and our balsamic dressing.

  • 2 tablespoons white wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon maple syrup or sugar
  • 1 small garlic clove, grated (approx ¼ teaspoon) Where ½ teaspoon garlic powder
  • ½ teaspoon every dried oregano, dried thyme and dried basil
  • ¼ teaspoon kosher salt
  • 6 tablespoons olive oil

  1. In a medium bowl, whisk together the white wine vinegar, Dijon mustard, and maple syrup. Grate the garlic clove, then whisk in the oregano, thyme, basil, and kosher salt.
  2. Gradually whisk in the olive oil, adding 1 tablespoon at a time and beating until incorporated until an emulsion forms. Serve immediately. Store in the refrigerator and bring to room temperature before serving (keeps at least 2 weeks).
