There’s nothing quite like the flavorful crunch of a great granola recipe. The sweetness of oats, the slightly fruity notes of hidden coconut, the jewels of sweet grapes or cranberries… it’s cozy and fresh at the same time. Of course, purchased products cannot be compared with homemade products. Here’s our favorite homemade granola recipe: Soft, perfectly flavored and ultra-crunchy, it is cooked at low temperature until it has the right chewy texture.

Ingredients for homemade muesli

Of course, you can put almost anything in a homemade granola. (And we’ll see the variations. Trust us!) But we wanted to make ultra-crunchy granola: the kind that tastes luxurious, light, and crunchy. Here’s what we found was the best combination of ingredients and flavors:

  • neutral oil (or olive oil)
  • maple syrup (or honey)
  • peanut butter (or any nut butter; use sunflower butter or nut-free tahini)
  • Brown sugar
  • Vanilla
  • Cinammon
  • Old fashioned oatmeal
  • flaked almonds
  • grated coconut (unsweetened)
  • raisins

Not a coconut fan? The coconut is barely noticeable here: it just adds a nice nuance to the background flavor. We encourage you to try it! (We tested without and it wasn’t as tasty.)

How to make muesli

Many granola recipes use an oven heat that you would use to bake cakes or cookies: around 350 degrees Fahrenheit. But the the crispiest Homemade granola recipe is cooked longer over low heat. Here’s how we make ours (or jump to the recipe below):

  • Preheat to 250 degrees Fahrenheit. The low oven temperature makes the granola extra crispy.
  • Mix the wet ingredients, then the dry ones. Mix until fully combined. (Ingredient list see below!)
  • Cook for 1½ hours, stirring every 30 minutes. Place on a parchment-lined baking sheet and stir a little after 30 minutes and 1 hour.
  • Cool off completely! This is the important part. This extra step dries out the granola, turning it from moist to crunchy. Don’t skip this!

Flavor variations and alternative methods

There are a few other ways to make muesli yourself: And of course you can swap out all sorts of ingredients for nuts and fruit! Here are some ideas for other methods and additional flavor combinations:

  • Quick and chunky muesli: Try this Peanut Butter Granola if you like big chunks; it cooks in 20 minutes
  • Healthy muesli: Want a healthier option? Try the healthy maple pecan granola.
  • Dried fruit can substitute raisins such as cranberries, cherries, apricots, blueberries, etc. (you can also add additional fruit)
  • other nuts such as pecans, flaked almonds, hazelnuts, or cashews work well
  • seed such as nuggets (pumpkin seeds) or chia seeds also work
  • chocolate chips are a great addition!

Storage of homemade muesli

How long does homemade muesli keep? First, make sure it’s completely cool before putting it away. After removing from the oven you need at least 45 minutes. Then pour into a jar and keep for up to 1 month. However, you will likely eat it a lot quicker!

  • ¼ cup the water
  • ¼ cup neutral oil
  • ¼ cup maple syrup (or honey)
  • ¼ cup peanut butter
  • ¼ cup Brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons Cinammon
  • ½ teaspoon kosher salt
  • 3 cups Old fashioned oatmeal
  • ½ cup flaked almonds (or other nuts)
  • ½ cup unsweetened grated coconut
  • ½ cup Raisins (or other dried fruit)

  1. Preheat oven to 250 degrees Fahrenheit.*
  2. In a large bowl, combine water, neutral oil, maple syrup, peanut butter, brown sugar, vanilla extract, cinnamon, and kosher salt. Stir in the oats, almonds and coconut.
  3. Spread onto a baking sheet lined with parchment paper. Bake for 1½ hours, until lightly browned, stirring every 30 minutes.
  4. Allow to cool completely, about 45 minutes: the muesli will become more crispy as it cools. Stir in raisins. Store in a jar for up to 1 month (ensure it is completely cool before storing).
