How to make fresh cream

Watching the fresh cream thicken before your eyes is like magic! (That is, while you sleep.) All you need is 24 hours and a warm place, and you can make your own. It’s a great way to use up leftover cream, or perfect if you can’t find fresh cream at the store and have to wait a day. What you need for fresh cream:

  • 1 cup cream (with 18-20% fat)
  • 1 tablespoon plain yogurt (Greek or regular)
  • Clean container with lid (preferably glass)

Mix the two ingredients together, then cover the container and set in a warm place. After 24 hours you will see that the cream has thickened! It doesn’t have to be very thick as it will continue to thicken in the fridge. Voila: nice fresh cream!

  • 1 tbsp Natural yoghurt
  • 1 cup heavy whipping cream

  1. Place the ingredients in a clean glass container with a lid and leave in a warm place for 24 hours until thickened (the bacteria in the yogurt will ferment the cream and cause it to thicken).
  2. Uncover and stir. If it’s not thick, let it sit for a few more hours. When ready, place the mixture in the fridge where it will continue to thicken. It can be kept for up to 2 weeks.
