How to Make Sweet Potato Cabbage Soup

This sweet potato and kale soup combines ingredients we commonly use in our kitchen in a new way. It’s a vaguely Mexican stew with black beans thrown in and flavored with oregano, cumin, and just enough lime juice to make it pop. Sliced ​​scallions thrown in at the end of cooking give it a fresh flavor, and topped with sliced ​​radishes and a dollop of Greek yogurt, it’s a delicious way to replenish nutrients. The description

This sweet potato cabbage soup contains black beans and is flavored with cumin and lime; This is a gluten free and vegan hearty soup recipe.


  • 1 large yellow onion
  • 4 medium garlic cloves
  • 1 15 ounce box of SimplyNature Organic Black Beans
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1½ teaspoons cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1/8 at 1/4 teaspoon cayenne pepper (optional)
  • ½ teaspoon kosher or sea salt
  • 1 Sweet Potato Pound (3 cups diced)
  • 1 pint (4 cups) SimplyNature organic vegetable broth
  • 4 cups Chopped SimplyNature organic kale (approx. 3 ounces)
  • 3 Green Onions
  • 2 Radishes, thinly sliced
  • 1 tbsp lime juice
  • 6 tablespoons Friendly Farms plain Greek yogurt for topping (optional)
  • Hot sauce (optional)

  1. Chop the onion. Chop the garlic. Dice the sweet potato. Drain and rinse beans.
  2. In a large saucepan or Dutch oven, heat the olive oil over medium-high heat. Add the onions and sauté for 4 minutes until translucent. Reduce heat to medium, add garlic, oregano, cumin, garlic powder, black pepper, and cayenne (optional) and sauté for 30 seconds. Stir in the sweet potatoes, then add the vegetable stock, beans, and Kosher sea salt and bring to a boil.
  3. Once cooked, reduce the heat to low and simmer for 15 minutes, until the sweet potato is tender. While it is simmering, coarsely chop the kale. Thinly slice the spring onions and radishes.
  4. When the sweet potatoes are tender, remove from the heat and stir in the kale, scallions, and lime juice. Let cool slightly before serving. Taste and season with additional kosher sea salt, if desired. Serve topped with radishes, a small dollop of Greek yogurt (optional) and hot sauce.
