It’s made from only whole grain oats, meaning you get the health benefits of oats in every slice. (More on that below.) Here’s what you’ll need to make this gluten-free, dairy-free pumpkin bread:

  • Old fashioned oatmeal: Do not replace steel cut oats or instant oats! You need good oatmeal here. But you will be mixing it with flour, so you can substitute store-bought oatmeal as well.
  • Sugar or coconut blossom sugar: Use the powdered sugar of your choice.
  • Baking Powder, Baking Soda, Vanilla, and Salt: the usual suspects for cooking
  • Pumpkin Pie Spice: Grab a store-bought bottle or use our house blend.
  • eggs: These are important because they bind the oats together. Learn more about vegan substitutes below.
  • Pumpkin puree: Use plain pumpkin puree, not pumpkin pie filling! (It is different.)
  • Neutral Oil: Use organic vegetable oil, organic canola oil or grapeseed oil.

Make everything in the blender!

Here’s the secret of this recipe: you prepare everything in a blender! Many of our recipe testers have mentioned how easy it is to throw all the ingredients for this recipe in a blender. Here’s what you need to know:

  • It’s easier to use a high-speed blender or a quality blender. It also works with a not-so-good blender… you just have to work harder! Having some mixer power behind you helps, but it doesn’t have to. Be aware that blending may take a little longer if your blender isn’t capable of it.
  • First mix the oat flakes into the oat flakes. You’re going to throw some old-fashioned oatmeal in the blender and turn it on. Watch it turn into oatmeal powder! If your blender isn’t that good, you can use store-bought oatmeal.
  • Then add everything else and mix! The blender is key to the fluffy, moist texture. It’s so light and fluffy, you might be surprised it’s just oatmeal.

A note on texture, cooling and slicing

After you bake this healthy pumpkin bread, you’ll want to eat it right away. Not ! It is important to let it cool so that the texture sets. If you cut it right away, the pieces will fall apart! Promise.

Another tip: Cut the bread into fairly thick slices. This bread is wonderfully moist and chewy, but it’s gluten-free to keep it together. The texture is a little different than regular pumpkin bread, so it’s best held together with thick slices (as you’ll see in the photos).

  • Substitute flaxseed eggs. Using the recipe below, substitute flaxseed eggs for the eggs: these are simply ground flaxseeds mixed with water. It changes the texture of the bread slightly, but works well as a binder in vegan baked goods.

Are oats healthy?

Here’s the BEST healthy pumpkin bread, perfectly moist and flavorful. You’ll never believe it’s made without flour…just 100% rolled oats!


  • 3 cups Old-fashioned oatmeal (or 3 cups purchased oatmeal; do not substitute cut or instant oats)
  • ½ cup sugar or coconut blossom sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking powder
  • ¾ teaspoon kosher salt
  • 2 tablespoons homemade pumpkin pie spice*
  • 3 Eggs (or flax eggs for vegans)
  • 1 cup pumpkin puree
  • ¼ cup maple syrup
  • ½ cup neutral oil
  • 1 tbsp vanilla extract

  1. Preheat oven to 375 degrees. Grease an 8 or 9 inch loaf pan with coconut oil or oil.
  2. Place the oats in a blender and blend until the oats are finely ground and look like flour. Place all remaining ingredients in blender. Mix until they all come together into a perfectly smooth batter, pausing and scraping the mixing bowl as needed.
  3. Pour the batter into the prepared pan. Bake for 45 to 50 minutes, until a toothpick comes out almost clean (exact time depends on pan size and your oven).
  4. Allow to cool to room temperature in the pan (important for the consistency). Run a knife around the edges and turn over. Cut into thick pieces and serve (because it’s 100% oats, thicker slices are better). Storage information: Can be kept at room temperature for approx. 3 days: Store on a cutting board and cover with a tea towel. Or refrigerate for 1 week or freeze sliced ​​for up to 3 months.

*Or use 1 tbsp cinnamon, 1 tsp every ground ginger and allspice and ½ tsp every cloves and nutmeg.
