On their own, both are very bland, but add them to these Italian seasonings and they taste amazing. What you need for the grilled zucchini and pumpkin:

  • Medium zucchini: You want a zucchini that is neither too small nor too big. Oversized zucchini or summer squash can become stringy and cracked.
  • Medium summer squash: Same notes as for zucchini!
  • Dried basil and oregano: Bring the taste of Italy

How to cut zucchini and summer squash for grilling? There are many ways we like to do. Here’s a little breakdown:

  • Sleeve. You can slice the zucchini and squash into 1/2 inch thick slices.
  • Oblique (diagonal). If you cut diagonally or “obliquely”, you will get larger and more interesting shapes.

How to grill zucchini and squash

Now let’s get to the grilling! All you need to know is the grill temperature and the base time. Once you figure that out, memorize this recipe and repeat! Here are the basic steps (or jump to the recipe):

  • Preheat grill to medium-high heat. It’s about 375 to 450 degrees.
  • Cut zucchini and courgettes into rings or diagonally. Make the pieces about 1/2 inch thick.
  • Mix with olive oil and spices. See recipe below; Adjust as needed if you have more or less veggies.
  • Grill on the grates for 4 to 6 minutes. Cook until charred and tender, turning once.

  • 2 Medium yellow summer squash
  • 1 medium zucchini (1 3/4 books total with both)
  • 1½ tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt

  1. Preheat a grill to medium-high heat (375 to 450 degrees Fahrenheit).
  2. Cut the zucchini and squash diagonally into slices about 1/2 inch thick. Place in a bowl and mix with olive oil, oregano, garlic powder, onion powder, and kosher salt.
  3. Place the squash directly on the cooking grates and grill until charred and tender, about 2-3 minutes per side (4-6 minutes total). Taste and add a few more pinches of kosher salt.
