It’s officially SUMMER! I can’t tell you how excited we are for the summer fun here. The smell of the grill, a glass of chilled rosé and the sound of your neighbor mowing his lawn (right?). Alex and I love to create vegetarian grill recipes to prove that grilling without meat is just as delicious. This year we’ve teamed up with ALDI to cook up an easy and healthy grilled summer dish: these grilled vegetable noodles. And it turned out so amazing we can’t stop eating it! He has double Grilled Vegetables: both for pasta and to mix with a grilled romesco sauce. Read on for the recipe!

Healthy and fresh food… for everyone

Funny story: Alex and I have been shopping at ALDI since we got married (gulp!) 11 years ago! Back then we mainly bought pizza sauce and pre-made base. How things have changed! For one, we’re obsessed with making our own homemade pizza. And ALDI has changed too! They focus on offering healthier, fresher and organic ingredients. It’s such an amazing mission because Alex and I believe that everyone deserves to eat well, healthy and fresh. How to make pasta with grilled vegetables

So, this pasta with grilled vegetables! Alex and I wanted to bring that smoky grilled flavor to a vegetarian main course. Oddly enough, after 8 years of mostly eating plants, we have never grilled veggies or mixed them with pasta. I think there is always something new to discover! The beauty of this recipe is that there are two grilled components: veggies for the veggie pasta and peppers for the grilled romesco sauce.

What is Romesco? Romesco is a sauce made from roasted peppers and almonds that originated in Spain. We usually use potted red peppers in the preparation. But for this recipe we thought, why not grill the peppers to create a grilled romesco? It makes a creamy, bright red sauce for slightly smoky and addictive grilled veg pasta. Sprinkle with crumbled feta or leave for vegan pasta. Here we used linguine pasta, but you can also use penne or other short forms. We will definitely be eating this grilled vegetable pasta all summer long!

This grilled veggie pasta everyone loves has twice the amount of grilled veggies: they’re grilled for the pasta and to mix into the savory romesco sauce!


  • 2 Red pepper
  • 3 large heads of broccoli
  • 1/2 medium to large red onion
  • 3 tablespoons SimplyNature Extra Virgin Olive Oil, shared
  • 1 teaspoon plus a few pinches of kosher salt, shared
  • ½ cup Southern Grove Oven-Roasted Unsalted Almonds
  • 2 Garlic cloves
  • 151 ounce Happy Harvest Diced Tomatoes
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp pepper stone mill
  • ¼ teaspoon Stonemill crushed red peppers
  • 1 Pounds of SimplyNature organic pasta (linguine or penne, or gluten-free pasta if desired, e.g. Live Free range)
  • 2 at 4 ounces of Happy Farms Preferred Feta, optional

  1. Grill the vegetables: Preheat a grill on medium-high. Cut off the top of the peppers and remove the skin and seeds. Remove the top stems and cut the top in half, then quarter the bottom. Cut the broccoli into bite-sized florets. Cut the onion into thick slices. Lightly brush the vegetables with about 1 tablespoon olive oil and a few pinches of kosher salt. Use your hands to rub olive oil over the vegetables to lightly coat them.
  2. Lay a few sheets of aluminum foil over the entire grill (or use a grill basket). Poke several small holes in the foil. Place vegetables on foil and grill, turning occasionally, until tender and lightly charred (about 15 minutes). Remove from the grill and place the vegetables on a baking sheet.
  3. To make the Romesco sauce: Peel the garlic. In a blender or food processor, add almonds, garlic, tomatoes (including canned juice), 2 tablespoons olive oil, lemon juice, smoked paprika powder, red bell pepper, and kosher salt. When the vegetables are grilled, remove the pepper slices and add to the blender. Process sauce until smooth.
  4. Make the noodles: Bring a large pot of salted water to a boil. Cook pasta al dente, then drain.
  5. Toss pasta with romesco sauce and broccoli and grilled onions, then season to taste and add salt to taste (we added about ½ tsp – you can add more salt for the vegan version than for the veggie version as the feta cheese adds salt) . Garnish with crumbled feta and serve.
