Since we eat mostly meatless at home, it’s sometimes hard to think of tasty yet filling veggie taco ideas. This time we decided to pair our favorite standard lentil taco recipe with another one of our favorites: grilled veggies! The result was delicious, healthy tacos with just the right amount of contrasting textures and flavor complexity to satisfy our taste buds. Read on for the recipe!

How to make this healthy taco recipe

Our lentil tacos recipe is one of our favorite recipes and has become a fan favorite. We’ve taken our old recipe and given it a new twist in the form of healthy grilled veg tacos. In this version, I got lazy and didn’t want to make the whole batch of taco seasoning, so I threw in all the seasoning along with the lentils. This might seem like a lot of spices, but you’ll likely find plenty of them in your spice drawer (if not, it’s good to have them around!).

For grilled vegetables, they are very easy to prepare. Simply thinly slice the red onion, zucchini, and summer squash, drizzle with olive oil, and season with kosher salt and black pepper. Then place on the grill and cook over medium-high heat until tender, about 5 minutes. They come off the grill lightly charred and with a smoky flavor, perfect for tacos!

These healthy tacos may take a little time to make, but they’re worth it! To save time, you can prepare the lentils in advance. And make sure to prep the pickled onions ahead of time (they’re easy to put together!).

for lentils

  • 1 ¼ cup brown lentils (8 ounces)
  • 1 tbsp olive oil
  • 2 tablespoons Ketchup
  • 1 tbsp chili powder
  • ½ tbsp cumin powder
  • ½ teaspoon every Paprika, garlic powder, onion powder and oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 a pinch of crushed red pepper flakes (or more, depending on spice tolerance)

For the grilled vegetables

  • 1 summer squash
  • 1 zucchini
  • 1 Onion
  • olive oil
  • Kosher salt
  • pepper

For the taco toppings


  1. Preheat a grill to medium heat.
  2. In a medium saucepan, bring 1 ¾ cups of water to a boil (and add a pinch of kosher salt). Once boiling, add the brown lentils, cover and reduce the heat. Cover and simmer for 20-25 minutes until most of the water has been absorbed.
  3. Turn off the heat, then stir in the olive oil, ketchup, chili powder, cumin, paprika powder, garlic powder, onion powder, dried oregano, kosher salt, black and red pepper flakes.
  4. In the meantime, cut the squash, zucchini and onion into thin strips. Put them in a bowl; Toss with enough olive oil to coat and sprinkle with kosher salt and pepper. Grill the vegetables until tender, about 5 minutes, turning frequently.
  5. Prepare the pickled red onions and your choice of sauce (lime sour cream, cashew cream, chipotle sauce, or creamy cilantro sauce).
  6. To serve, add lentils to a warmed tortilla; Garnish with grilled vegetables, pickled onions and chilli-lime sour cream.
