Have you ever tried mango skewers? These Grilled Mango Terikyai Skewers might be our new best summer BBQ recipe! Seriously, the sweetness of mango with savory veggies and homemade teriyaki sauce is a pairing made from heaven. We made these Grilled Teriyaki Mango Skewers for a BBQ and everyone kept pulling the mangoes off the skewers because they were so, so good! The variety of mango we used was called Honey Mango: it’s a little smaller and a little sweeter than the typical mango available here in the United States. How to make Grilled Mango Teriyaki Skewers? What are honey mangoes?
The type of mango we used for these grilled teriyaki mango skewers is called honey mangoes, one of the top six varieties of mangoes sold in the United States. Four such varieties are listed above! Some fun facts about honey mangoes:
- When ripe, the skin takes on a deep golden color and small wrinkles appear. Thus, crumpled is synonymous with blackberry!
- Honey mangoes are also known as Champagne mangoes or Ataulfo mangoes—So look for one of these names at the grocery store.
- It’s smaller, sweeter, and more tender than the most common mango varieties in the United States.
- A cup of diced mangoes provides 100% of your daily vitamin C intake!
How to make mango skewers
Preparing these Grilled Teriyaki Mango Skewers is pretty easy – probably the hardest part about slicing mangoes! To learn how to cut a mango, Alex and I put together a fun video here showing how we cut mangoes. (Note that to make the mango skewers, cut the mangoes into larger chunks than the cubes shown in the video so they stay on the skewers and don’t fall off.)

Another tip for chopping veggies for skewers is that we also like to dice most veggies larger than you normally would. For the red onion, cut into wedges and thread a few layers of onion onto the skewer (see above). Since the mango is the best part, we proportionately added more mango than veggies to each skewer.
How to Make Homemade Teriyaki Sauce
Somehow, after 8 years of writing a food blog, Alex and I had never made homemade teriyaki sauce (gasp!). We were thrilled to use these Grilled Mango Teriyaki Skewers as an excuse to make our own recipe. Homemade Teriyaki Sauce is really easy; Our recipe uses only soy sauce, rice vinegar, and maple syrup. The mixture is heated and then a cornstarch slurry is mixed in, making it thick and glossy. It can be made in about 5 minutes and the taste is unreal. We will never buy teriyaki sauce again!

The description
These Grilled Mango Teriyaki Skewers are made with fresh mangoes and a homemade teriyaki sauce for a recipe for both sweet and savory summer barbecues.
- Preheat a grill to medium heat. If using wooden skewers, soak the skewers for at least 30 minutes while preparing the recipe.
- Prepare the homemade teriyaki sauce.
- For the skewers: Cut the mango into large dice (bigger than a dice) so they thread onto the skewers. Cut the red bell pepper, orange bell pepper, zucchini, and red onion into large chunks (you can wedge the onion and use a few layers when threading). Thread vegetables and mangoes onto skewers. Tip: We threaded 2 of our mangoes on each skewer so that there are proportionately more mangoes than vegetables on each skewer.
- Place the skewers on a platter and brush one side with the glaze. Place the skewers glazed side down on the grill and brush the tops with the remaining glaze. Grill 6 to 10 minutes on each side until tender and lightly charred.
- If you’re serving rice or quinoa, prepare the grain according to package directions. When the skewers are done, place them on rice or quinoa and serve with the remaining teriyaki sauce, if desired.
