Now that I’ve lived in Indiana for 15 years, I can say with confidence that corn is the way to go main thing. Roadside stands selling fresh Indiana sweetcorn and other seasonal goodies pop up like clockwork every summer, and our local farmer’s market sells corn on the cob by the dozen. If you’re someone who puts salt and butter on your candy corn every time, you have to try this Mexican Grilled Corn with Mayonnaise. Read on for the recipe!

Corn with mayonnaise?

Also known as elot, Mexican grilled corn is basically charred sweetcorn covered in a tangy lime and chili pepper mayonnaise. Authentic Elote recipes use Mexican cream as the base for this spread that looks a bit like sour cream. However, many recipes use mayonnaise instead!

This Mexican corn with mayo is very tasty and deserves a spot in your summer meal. Spicy lime juice complements the rich mayonnaise and fiery chili powder perfectly in this Mexican grilled corn recipe without the corn tasting sour.

Take it up a notch!

To make this easy Mexican mayonnaise corn recipe even better, add some garlic to the chilli-lime mayonnaise. You can also roll the corn in cotija cheese, a deliciously crumbled Mexican cheese. However, cotija can be hard to find, so crumbled feta can be used instead for a similar effect.

To be perfectly honest, we don’t think this recipe needs more. Alex and I like to keep our recipes as simple as possible, and the combination of slightly smoky sweetcorn with chilli-lime mayonnaise hits the spot every time!

How to grill corn on the cob

If grilling corn intimidates you, don’t panic. At first glance, there seems to be some kind of secret recipe for roasting corn. Some people swear by the “in the envelope” method, but when we tried it we ran into fire safety issues (don’t worry, we’re still both in one piece).

However, we were pleased to find this video by Mark Bittman showing how to easily husk corn and pop it straight onto the grill. Yes, it’s that simple! Here are the main steps:

  • preheat a grill over medium heat.
  • Hull the corn but save a handful: Shell the corn by peeling and holding the outer layers one at a time. Then use kitchen twine or twine to tie the leaves together. Rub the corn with oil.
  • Grilling on the grates: Place the corn on the grill and cook until it begins to blacken, then flip. Cook until black on all sides, about 12 to 15 minutes total.

  • 4 corn on the cob
  • 1 tbsp neutral oil (grape seed, vegetable, sunflower or olive oil substitute)
  • 3 tablespoons mayonnaise
  • 2 tablespoons fresh lime juice
  • ¼ teaspoon chili powder
  • ¼ teaspoon cumin
  • Kosher salt
  • Ground fresh pepper
  • cilantro, for garnish

  1. Preheat a grill on medium-high.
  2. Shell the corn by peeling and holding the outer layers one at a time, face down, away from the cob. When you’re done, use kitchen twine or twine to tie the leaves together (see photos).
  3. Using your hands, rub the oil evenly on each cob of corn, then place them on a baking sheet.
  4. In a small bowl, mix together the mayonnaise, lime juice, chili powder, and cumin. Season with salt and pepper to taste.
  5. Place the corn on the grill and cook until it begins to blacken, then flip. Cook until black on all sides, about 12 to 15 minutes total.
  6. Spread the chilli-lime mayonnaise over the corn. Garnish with a squeeze of lime and chopped coriander leaves. Serve immediately, using the bound peels as a handle for easy tasting.
