  • 4 4 ounce salmon fillets*, skin on (wild if possible)
  • ¼ cup soy sauce (or tamari)
  • ¼ cup olive oil
  • 2 tablespoons the water
  • 1 tbsp rice vinegar
  • 2 tablespoons Sugar
  • 1 tbsp Dijon mustard
  • 1 Garlic clove, grated
  • ½ teaspoon kosher salt

  1. Preheat a grill to medium-high heat (375 to 450 degrees).
  2. In a medium bowl, whisk together soy sauce, olive oil, water, rice vinegar, sugar, Dijon mustard, and grated garlic.
  3. Place the salmon, skin side up, in a large bowl or container and pour in the marinade. Allow to marinate at room temperature for at least 30 minutes (or in the fridge for up to 3 hours; if so, let stand at room temperature for 30 minutes before cooking).
  4. After marinating, place the salmon on a baking sheet. Brush generously with the marinade, then discard the rest of the marinade. Sprinkle with kosher salt (spread over the fillets) and freshly ground pepper.
  5. Grill the salmon, skin-side down, over indirect heat until grill marks appear and it pulls away from the rack, 3 to 5 minutes. Flip and cook an additional 2 to 5 minutes, depending on the thickness of the salmon, until the salmon is flaky and just pink at the thickest part and the internal temperature is 125 to 130 degrees.
