Alex and I only used mangoes for one thing: mango sauce. After getting married 10 years ago, this was one of the first recipes we made together. I was instantly drawn to the way the sweet, tropical flavor of the mango was blended with the red onion, cilantro, and lime. But now Alex and I are trying to get a little more creative with our use of mango. Because Mangoes aren’t just for salsa; You can also be the main event! How to roast mangoes

This recipe was born from a crazy idea: what if mangoes were the focal point of a taco? Instead of being diced for salsa, what if they were sliced ​​into strips and grilled? It turns out that grilled mangoes are incredibly delicious. And placed in a tortilla on top of a layer of chilled black beans with a drizzle of creamy cilantro-lime sauce, they’re quite divine. So our grilled mango tacos were born!

How are mangoes grilled? It’s actually quite simple: And we didn’t even use a charcoal grill! We used a grill pan which makes those beautiful charcoal spots on the grilled mangoes. To grill them, simply slice the mango into strips, then drizzle with olive oil, chipotle powder, and kosher salt. Heat a griddle pan over medium-high heat, then add the mango and grill until blackened, about 2 minutes on each side. You can also use a charcoal or gas grill, but grilling mangoes any time of the year is super easy with a grill pan!

Mango Facts

The type of mango we used for these mango tacos is called a honey mango, one of the top six varieties of mangoes sold in the United States. Some fun facts about honey mango:

  • When ripe, the skin takes on a deep golden color and small wrinkles appear. Thus, crumpled is synonymous with blackberry!
  • It’s smaller, sweeter, and more tender than the larger mango varieties that are more common in the United States.
  • Originally from Mexico, it is also known as Champagne or Mango Ataulfo (So ​​look for one of these names at the grocery store!)
  • Like all mangoes, the honey mango is very high in vitamin C and is also a good source of vitamin A and fiber. A cup of diced mango provides 100% of your daily vitamin C intake.

Mango Taco Sauce

Now back to that mango taco sauce we call dream sauce. You might think there’s enough mango in these mango tacos, but guess what? It’s also in mango taco sauce. Instead of dairy, Dream Sauce uses mango to create its creamy texture. Pureed with coriander and lime, the mango gives the sauce a creamy, slightly sweet body. You only need a few fillets, but the dream sauce is deliciously flavorful. Mango tacos aside, you can use the dream sauce for almost anything: a dip for roasted veggies or homemade fries would be our favorite!

Get your taco night started with these mango tacos! Black beans, grilled mangoes, and a creamy green taco sauce make this savory vegan taco.


For the chilled beans

  • 2 Garlic cloves
  • 2 15-ounce cans of black beans
  • 2 tablespoons Extra virgin olive oil
  • ½ teaspoon kosher salt
  • Black pepper

For the mango dream sauce

  • 2 Mangoes with honey* (1 cup diced)
  • 1 green onion
  • 1 cup packed coriander leaves and tender stems
  • 2 tablespoons lime juice (1 lime)
  • ¼ teaspoon cumin
  • ¼ teaspoon kosher salt
  • 2 tablespoons Extra virgin olive oil
  • 2 tablespoons the water

For the tacos

  • 3 mangoes with honey*
  • Extra virgin olive oil
  • Chipotle powder
  • Kosher salt
  • 8th Tortillas
  • Sliced ​​radishes, for garnish
  • Shredded coriander leaves for garnish

  1. Preparation of the chilled beans: Chop the garlic. Drain the beans and collect the liquid from the can in a glass measuring cup.
  2. In a medium-sized saucepan, heat the olive oil over medium-high heat. Add the garlic and sauté for 1 minute, until fragrant but before it turns brown. Add beans, ½ cup reserved canning liquid, kosher salt, and some black peppercorns.
  3. Reduce the heat to medium-low and cook for 10 to 15 minutes, stirring frequently and mashing the beans towards the end of the cooking time, until most of the liquid is cooked through and the texture is pureed and thick but not dry . Add additional canned liquid as needed. Taste and season with additional salt if you like.
  4. In the meantime prepare the sauce: Dice the mango. Cut the spring onions into large pieces. In a blender (on high speed if possible) add all the sauce ingredients and blend on high until a creamy green sauce forms. Pour into a bowl and set aside until ready to serve.
  5. Preparation of the grilled mango: Cut the mango into strips. Place the strips in a bowl, then add a small drizzle of olive oil (just enough for coating) and a light pinch of chipotle powder and kosher salt. Heat a griddle (or skillet) over medium-high heat, then add the mango and grill until blackened, about 2 minutes on each side. (You can also use a charcoal or gas grill.)
  6. Assemble the tacos: Warm tortillas** or char by placing one tortilla over an open gas flame over medium-high heat for a few seconds on each side, turning with tongs until slightly charred and hot. Spread a generous amount of refried beans on a tortilla, then top with about 3 strips of grilled mango, sliced ​​radishes, coriander leaves, and a small squirt of Dream Sauce.

Remarks

*Honey mangoes are also known as champagne or Ataulfo ​​mangoes. This variety of mango is ripe when the skin is wrinkled, which does not mean it is overripe. Just squeeze and if it gives, it’s perfectly ripe!
