This Grilled Tomato Cheese is one of the best grilled cheese recipes, featuring roasted tomatoes, tomato mayonnaise, basil, and melty mozzarella.


  • 2 liters (4 cups) cherry tomatoes
  • ¼ cup mayonnaise
  • 2 cups grated mozzarella cheese
  • 8th basil leaves
  • 8th slices of bread
  • butter
  • Kosher salt

  1. Preheat oven to 400°F.
  2. Line a baking sheet with parchment paper and place the tomatoes on it. Bake for 15 minutes or until the tomatoes start to burst.
  3. Place the tomatoes in a bowl and gently mash them with a potato masher to extract the juice. Drain the tomatoes completely and collect the juice in a small bowl. Mix 1 tablespoon juice in ¼ cup mayonnaise until the consistency of a sauce (double the tomato juice and mayonnaise for more sauce). Reserve the drained tomatoes and sprinkle with kosher salt.
