Grilled beets

So you want to roast beets? Here’s how! Grilled beets are a great summer side dish when you want to fire up the grill. These come out soft and tender, cooked to perfection and even better with a sprinkling of feta cheese. Although they take a little longer than most grilled vegetables, they’re worth the wait. Serve them with some other grilled vegetables or summer salads and they complete the meal. Here’s how to make them!

Ingredients for roasted beets

Let’s get one thing straight: beets are delicious no matter how you cook them! If you just want to cook beets quickly, we recommend Instant Pot Beets, which only take 30 minutes. You can also roast them (our favorite!) and cook them. But if you are already planning to fire up the grill: You should definitely try the roasted beets! All you need are a few ingredients:

  • beets
  • olive oil
  • Italian spice (Optional)
  • salt and pepper

Add a pinch to serve feta cheese is nice too (beets and feta go perfectly together!). This makes them a more sophisticated side dish. But it is certainly not compulsory!

Yes, you can grill beets directly on the grill grates. But for this method, the beets are roasted in a foil bundle. (You can also use the foil method for potatoes and corn.) Here’s why:

  • Foil pack helps contain the mess. Beets are messy! Beet juice ends up everywhere when you’re handling sliced beets. We therefore advise against placing the beets directly on the grill grates.
  • The foil also takes up less space on the grill. Try grilling beets right on the grates and they’ll take up the entire grill with no room for anything else! With the foil bag method, they take up much less space, leaving room for a grilled main course or other veggies.

  • Cooking time: 35 to 50 minutes. The most important thing to consider about roasted beets is the cooking time: they take longer than any other roasted vegetable. (Don’t worry: it’s always faster than frying!)
  • Taste test to assess cooking. Exact timing depends on how thick or thin the cut is, the age of the beets, and the exact temperature of the grill. Throw them on the grill and know you have to try them!
  • Cook on medium heat. It’s 375 to 450 degrees Fahrenheit.
  • Add Italian spices: It gives the beets a subtle Mediterranean touch! Use purchased or we have a house recipe.
