Summer has come and gone, leaving our garden with a tangle of vines and a pile of unripe tomatoes. But Alex and I realized the following: Just because tomatoes aren’t red doesn’t mean they aren’t tasty! If you have them in your garden or see them at your farmers market, there is so much to do with green tomatoes.

Our Best Ideas: Toss them in a fresh green tomato salsa that tastes just like salsa verde! Or channel your housewife vibes and whip up some savory green tomato pickles. But if you want to go fast: The green tomato toast is just the thing! Slice them and toss them on toast spread with goat cheese and you’ve got a delicious appetizer or lunch. It is that perfect quick use for those flavorful tomatoes.

What are green tomatoes?

Before you start: what Are green tomatoes? Are they all just immature versions of red tomatoes? Well, yes and no. While the common terminology for “green tomato” is a red tomato that is not yet ripe, there are actually tomato varieties that are bred to be green when ripe. The green zebra tomato is a good example of a ripe green heirloom tomato. We used this variety of tomato in our Tomato Basil Mozzarella Salad for a nice contrasting colour. In this case, the tomato tastes juicy and sweet, just like a red tomato.

However, this green tomato recipe is for the opposite type of tomato! Yes, this is for red tomatoes that aren’t ripe yet and will remain green and chewy. However, what people have discovered over the years is that green tomatoes have a tangy, tangy flavor: perfect for things like salsa, pickles, and spread on fancy toast! Green tomatoes are just as delicious on their own: just different.

That said, you can make this green tomato recipe with either traditional “green tomatoes” or ripe green tomatoes. It will be delicious both ways!

How to make this green tomato recipe

There are so many ways to prepare a green tomato recipe, from frying it to baking a ground beef pie. But our favorite version so far? A grilled open sandwich topped with tomatoes in all their raw, electric green glory. Spreading the toast with goat cheese is a great contrast to the tomatoes. And the garlic salt topping got it into addiction territory for us! We also used fresh herbs that are still hanging in our garden. I preferred chives, with Alex’s favorite being basil.

How do you make this green tomato recipe? It’s easy:

  • Cut the tomato into thick slices.
  • Finely chop the red onion, then rinse with cold water: this will soften the red onion’s crunchiness.
  • Assemble the toast! Scatter goat cheese on top, add green tomatoes and sprinkle with garlic salt and fresh herbs.

Looking for an easy green tomato recipe? Try this delicious toast spread with goat cheese and topped with onion strips and herbs.


  • 2 big green tomatoes
  • 1/4 small red onion
  • 1 a handful of fresh chives, fresh basil or oregano
  • 4 Slices of crusty bread (or homemade bread)
  • 4 oz goat cheese
  • garlic salt*
  • Ground fresh pepper

  1. Slice the green tomatoes. Finely chop the red onion, then rinse the slices several times under cold water. Chop or thinly slice the herbs.
  2. Toast slices of bread.
  3. Spread goat cheese on each slice of bread. Garnish with tomatoes, chopped onions and herbs. Sprinkle the tops of the tomatoes with garlic salt and freshly ground pepper. Serve immediately.

Remarks

*You can make your own garlic salt like we did or use store bought ones. Another good choice would be herb salt.
