Ready for some easy vegan tacos… with a color theme? Yes, these green tacos are not only extremely delicious and ready in 30 minutes, they also have a theme! Green lentils, spring onions, green salsa and green cilantro sauce: What’s not to like? And they’re all wrapped in our favorite organic tortillas from One Degree Organics, a family business that sources organic ingredients from farmers. And tell their stories. About the company: One Degree Organics

The company behind the tortillas for these green tacos, One Degree Organics, is owned by the family of my friend Sondra, another mom with a baby who is close to Larson. I discovered that children of the same age make friends instantly! Sondra couldn’t be prettier and I’m absolutely sure her whole family is the same. The amazing part of their business is they fly all over the world in search of sources for their organic produce. Serious dream job!

The goal of One Degree Organics is to bring food straight from the farm to your table So there is only a degree of separation between you and the person who grew your food – like at a farmer’s market. And who’s ever heard of making that with stuff like tortillas?! This is really avant-garde. In addition, all One Degree products (germ flours, cereals, breads and granolas) are sprouted, traceable, organic and non-GMO. We loved using their organic tortillas as the base for these easy green tacos!

How to make green tacos

These tacos are very loosely based on an idea our friend Ellen had for her late night tacos. Instead of taco meat, green lentils seasoned with cumin and garlic powder make up the base of these green tacos. After starting with green lentils, we realized we could use those green theme (verde) for all toppings! Spring onions, kale, green drizzle and green salsa. And so our taco recipe “verde” was born.

These green tacos are packed with flavor and super quick: they only take 30 minutes to make. We used One Degree Organics Organic Sprouted Tortillas in our vegan taco recipe. The taco is incredibly delicious: the combination of fresh flavors and textures is amazing: the chewy lentils, creamy cilantro sauce, and crunchy kale make for a very satisfying taco.

The component of these green tacos that requires some forethought is the creamy cilantro sauce, which is based on our Cream Cashew Recipe. It’s a creamy non-dairy sauce that uses mixed cashews as a base. Since the cashews need to be soaked before mixing the sauce, you need to allow plenty of time.

The shortest steeping time that works is 30 minutes if you have a high speed blender. If you have a standard blender, we recommend 1 hour or even overnight to soak the cashews. So just start soaking them in the morning when you go to work! (If you eat dairy, you can definitely use sour cream instead, and these tacos will be just as delicious.)

These green tacos have a color theme with green lentils, collards, and a light green cilantro sauce!


For the lenses

  • 1 ½ cups green lentils
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ¾ teaspoon kosher salt
  • Ground fresh pepper

For the tacos


  1. For the creamy cilantro sauce, soak the cashews for at least 30 minutes while you prepare the rest of the recipe (for a high-speed blender), or soak overnight or in the morning if you’re thinking about it. . The longer the better! (You can also make the sauce ahead of time – see the instructions in the cilantro sauce recipe!).
  2. Place the lentils in a saucepan with 6 cups of warm water. Bring to a simmer, then cook until just al dente (taste often to gauge doneness), about 15-20 minutes. Drain, then stir in olive oil, cumin, garlic powder, and kosher salt.
  3. Cut the spring onions into thin slices. Thinly slice the cabbage. If using, chop the avocado.
  4. Meanwhile, prepare the creamy coriander sauce.
  5. Reheat tortillas according to packet instructions*. (We usually use ours over an open flame, but that’s not the preferred method for One Degree Tortillas.) To serve, top the tortillas with lentils, spring onions, kale, salsa verde, shredded cilantro leaves, and a cilantro fillet.
