Here’s a beautifully shiny juice packed with nutrients: try it Green Juice! Green juice is a blend of green vegetables brought together in one healthy drink. Green juice has become a wellness trend, but remember that it cannot cure any disease or make you lose weight. However, it’s a great alternative to sugary soda that contains all the nutrients of this flavorful vegetable. This one is delicious and full of flavor: not bitter at all! Best of all, you can make this recipe right in your blender—no juicer required.
Green Juice Benefits: Why Drink It?
Why drink vegetables in the form of juice? Well, all the green juice benefits you may have heard about are overblown. Green juice does not make you slimmer or cure diseases. Similar to celery juice, green juices have inflated health claims. Here’s what we know:
- Drinking green juice gives you all the benefits of vegetables: except fiber. It’s even better to eat the vegetables whole. Consider making sautéed spinach instead, or snacking on celery and cucumber with a healthy yogurt dip. Or make one of our green smoothies!
- Avoid juice cleanses. Research links juice cleanses to eating disorders and a negative relationship with food (read more here).
- Spinach, celery and cucumber are low in calories but high in nutrients. If you drink the juice, you will get all the vitamins of this vegetable.
- Green juice is a great alternative to sodas or other sugary drinks. Instead of drinking the empty calories and sugar of a soda pop, ingesting this juice is definitely a better choice!

Ingredients for green juice
There is no “standard” for making green juice: every chef, restaurant and juice bar has their own recipe! Leafy greens like spinach, kale, or Swiss chard are often used along with celery, cucumber, and fresh herbs. What’s in our green juice? Here are the veggies we found essential to the mix:
- Spinach: we like to use baby spinach; You can also use baby cabbage or chopped kale
- celery
- Cucumber
- Apple: To make the taste tasty and not bitter, we found the apple indispensable
- Ginger: optional but adds a nice nuance to the finish
- lemon juice: adds a nice luminosity
How To Make Green Juice (In A Blender)
You can make this green juice in a blender: it’s easy to make and comes together quickly. Here are the main steps to the mixer version:
- Blend all ingredients on high power until pureed and smooth. At this point, it looks like a thick smoothie. You will use a little water to mix it up.
- Add ice and blend again! Add just 1 cup of ice and the green juice will be chilled so you can drink it right away. This is a fun feature as most juices have to wait a few hours for them to cool.
- blunt! This is the important part. Strain the juice through a medium or fine mesh strainer/strainer or through a nut milk bag. Using a medium-mesh sieve will result in a juice with more pulp, giving you more fiber. A fine-mesh sieve makes it very clear. Discard this pulp or see some uses below.

Or do it with a juicer!
You can also make this green juice recipe using a regular juicer! Simply run all produce through the juicer and omit ice and water in the recipe below. Then, refrigerate the juice until completely cold before serving.
What to do with green pulp?
Do you save your juice porridge? Honestly, we usually throw it away. It’s a waste to throw away all those fibers, but honestly, there aren’t many great things you can do with them. Here’s what we could use it for:
- Add to smoothies. Save the pulp and add to smoothies: you can even freeze it for a frozen texture! Try it in one of our green smoothie recipes.
- To the compost! Really, this organic matter is the best thing in your compost pile. Learn more about Composting 101.
