There is no “standard” for making green juice: every chef, restaurant and juice bar has their own recipe! Leafy greens like spinach, kale, or Swiss chard are often used along with celery, cucumber, and fresh herbs. What’s in our green juice? Here are the veggies we found essential to the mix:

  • Spinach: we like to use baby spinach; You can also use baby cabbage or chopped kale

  • Ginger: optional but adds a nice nuance to the finish
  • lemon juice: adds a nice luminosity

How To Make Green Juice (In A Blender)

You can make this green juice in a blender: it’s easy to make and comes together quickly. Here are the main steps to the mixer version:

  • Blend all ingredients on high power until pureed and smooth. At this point, it looks like a thick smoothie. You will use a little water to mix it up.
  • Add ice and blend again! Add just 1 cup of ice and the green juice will be chilled so you can drink it right away. This is a fun feature as most juices have to wait a few hours for them to cool.

  • 1 cup the water
  • 2 medium-sized apples, cut into pieces
  • 3 cups baby spinach leaves (or chopped spinach or baby cabbage)
  • 2 Celery ribs, roughly chopped
  • 1/2 Cucumber, peeled and roughly chopped
  • ½ tbsp freshly squeezed lemon juice
  • Optional: 1/2 inch peeled ginger
  • 1 cup Ice

  1. Wash the products.
  2. Place the water, apples, spinach, celery, cucumber, and lemon juice in a blender. Mix until smooth.
  3. Add 1 cup of ice and mix again. Strain the mixture through a medium or fine mesh strainer or bag of nut milk into a bowl (medium strainer keeps some of the fiber in the juice; fine strainer makes it completely clear). Pour into a glass and serve or refrigerate until ready to serve.
  4. Variant juicer: To do this in a juicer, simply strain all produce through a juicer, chill, and refrigerate until cold (omit the water and ice).
