This Dill Green Bean Potato Salad is a beautiful combination of cooked red potatoes and crispy green beans in a flavorful vinaigrette.

After weeks of looking forward to our garden in anticipation, our green beans are finally here! We took the first opportunity to use them with a new recipe idea. Sometimes recipes don’t work the first time and require some adjustments. But every once in a while, they’re an instant hit — like with this Green Bean Potato Salad. We based it loosely on a green bean salad from The Herbal Kitchen, made some adjustments of our own, and gave it our preliminary taste test. The judgment? Perfect. No adjustments are needed with this dill salad.

How to make Green Bean Potato Salad

Green Bean Potato Salad is all about summer, in one bowl. It’s a beautiful combination of cooked red potatoes, crunchy green beans, and fresh dill. You’ll be dressed in a combination of sherry vinegar, olive oil and shallot, which intertwine into a subtle yet delicious blend. Feel free to adjust it to your taste if necessary or try other types of oil, vinegar, cheese or herbs. And for a heartier vegetarian meal, you can also add chickpeas, beans, or a hard-boiled egg. We found the combination of red dill potatoes very satisfying. No settings here.

Making Green Bean Potato Salad is easy! Here are the basic steps:

  • Boil potatoes and green beans. Because we’re all about efficiency, we used the same pot for both! Start with the potatoes and add the green beans in the last few minutes. To preserve the nice green color of the green beans, blanch the beans by placing them in an ice water bath after they have boiled for a few minutes. This locks in the light green color and makes them crispy instead of soft
  • A simple dressing. Combine olive oil, sherry vinegar, shallots, salt and pepper to make an easy dressing to coat the salad.
  • Add feta (optional). Serve with feta cheese crumbs if desired! For a vegan version, it’s just as delicious without. Or try our naturally vegan dill and potato salad with a delicious oil and vinegar dressing.

The description

This Dill Green Bean Potato Salad is a beautiful combination of cooked red potatoes and crispy green beans in a flavorful vinaigrette.


  • 2 red potato books
  • 1 pounds of green beans
  • ¼ cup fresh dill
  • 1 shallot
  • 2 tablespoons sherry vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • Ground fresh pepper
  • ½ cup crumbled feta cheese (optional)

  1. Boil a large pot of salted water
  2. Meanwhile, wash the potatoes and cut into small pieces. Wash the green beans and cut off the ends. Roughly chop the fresh dill. Finely chop the shallot and place in a small bowl with the sherry vinegar.
  3. When the water is boiling, place the potatoes in the boiling water for a total of about 14 minutes. Prepare a bowl of ice water for the green beans (see next step).
  4. In the last 2-3 minutes after the potatoes boil, add the green beans and cook until just tender and still light green. After the 2-3 minutes, immediately remove the beans from the water and add them to the bowl of ice water (this will stop the cooking, leaving them green and crispy). Drain the potatoes and let them cool before serving the salad.
  5. In a large bowl, combine potatoes, beans, shallots and vinegar, dill, olive oil, kosher salt and a generous amount of freshly ground pepper. stir to combine; taste and season with more oil, vinegar, salt or pepper.
  6. Serve sprinkled with crumbled feta cheese.
