Ahh, being a smoothie guy. The truth is that in 4 years of food blogging we have never found a smoothie recipe that wasn’t bitter or brown. And we certainly don’t have everything together. Life is messy. We prepare random meals from pieces in the fridge. We like popcorn with lots of butter and salt (blame it). We don’t actually drink smoothies. Until this green apple smoothie.

We haven’t liked many of the green smoothie recipes we’ve tried, but this one works for both of us. It uses Medjool dates to boost natural sweetness, balanced by the tartness of green apple and lemon. A tip: It is best to prepare it freshly, as cooling spoils the taste. So if you can, brew a batch and drink it right away.

  • 1 big green apple
  • 4 Medjool dates
  • 3 cups spinach
  • 8th ice cubes
  • ½ cup the water
  • 1 teaspoon freshly squeezed lemon juice

  1. Core the apple and cut into pieces (do not peel). Remove the pits from the dates.
  2. Place all ingredients in a blender and puree. Add the lemon juice and blend again for a few seconds. Serve immediately.
