Alex and I created this pancake recipe to be simple and classic, using ingredients that were easy to find. I hope you already have most of them handy! The result, however, is a fluffy pancake that tastes anything but ordinary. Here’s what you need:

  • greek yogurt – preferably whole
  • Whole wheat and all-purpose flour – Use for both flavoring and adding nutrients
  • egg & milk
  • neutral oil — like a vegetable or a grape seed; see link for more
  • maple syrup
  • baking powder, cinnamon and salt
  • white wine vinegar — optional but recommended to enhance the tart taste

As for the method, it’s really the same as any other pancake recipe. Mix the dry ingredients, mix the wet ingredients and blend together. Then bake on a griddle until golden brown! Alex and I made these

Greek yogurt is more common in our fridge than sour cream. BUT! You can also substitute sour cream for Greek yogurt in this recipe. This results in an even richer and fluffier pancake! Greek Yogurt Pancakes are light, fluffy and full of flavor! They’re made with easy-to-prepare ingredients for a quick and easy breakfast.


  • ½ cup whole wheat flour
  • ½ cup all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon Cinammon
  • ¼ teaspoon kosher salt
  • 1 big egg
  • ¾ cup milk
  • ½ cup whole greek yogurt
  • 1 teaspoon White Vinegar (optional but recommended)
  • 1 tbsp maple syrup
  • 2 tablespoons neutral oil (vegetable or grapeseed oil)
  • Serve: Spoons of Greek yogurt, berries, maple syrup

  1. In a medium bowl, whisk together whole wheat flour, all-purpose flour, baking powder, cinnamon, and kosher salt.
  2. In another bowl, whisk the egg, then stir in the milk, Greek yogurt, white wine vinegar, maple syrup, and oil.
  3. Add the wet ingredients to the dry ingredients. If the batter is too thick, stir in an additional drop of milk (the consistency of each brand of yogurt is different).
  4. Lightly oil a pan and wipe off excess grease with a paper towel. Heat pan over medium heat. Pour the dough into small circles. Bake pancakes until bubbles burst on top and bottom is golden brown. Then turn them over and cook until done. Repeat with the rest of the dough. Serve immediately with maple syrup.
