After traveling to the Greek island of Santorini, Alex and I were struck by the effortless simplicity of the food. Bright sunshine and sea breezes make everything you eat taste better. This classic combination of tomato, cucumber, and feta in a Greek salad is both easy and insightful. For this Greek dressing we wanted to capture the simplicity of the flavors and lifestyle of this sun-drenched country. It’s zesty, lemony, and the perfect all-purpose dressing for all kinds of salads. Here’s how!

Ingredients for the Greek dressing

Make homemade dressings because they are 1. delicious 2. contain no preservatives or additives 3. are quick and easy to make! And this Greek dressing is the perfect easy dressing for salads. The taste is nuanced and subtle; it does not dominate a salad but accentuates it. The ingredients are the usual suspects in a Mediterranean vinaigrette recipe:

  • Olive oil: Extra virgin olive oil is the basis of this healthy dressing.
  • Vinegar & Lemon Juice: This vinaigrette uses two types of “acids”: red wine vinegar and fresh lemon juice, which are regularly found in Greek cuisine. Using both introduces additional complexity.
  • Dijon mustard: A touch of Dijon mustard for a little extra pizzazz.
  • Oregano: The main aroma of the herbs is dried oregano. It is also very common in Greek cuisine, giving it that Greek flair.

How to make the perfect emulsion

To create an emulsion for this Greek dressing recipe, simply whip it with your hand. To incorporate the oil and vinegar properly, here are a few tips:

  • Use a medium sized bowl. Don’t use a small bowl! A medium-sized bowl allows for a large whisk movement. (Trust us, we’ve done this before in small bowls and it’s nearly impossible to melt the oil and vinegar.)
  • Gradually add the olive oil. The other trick to getting an emulsion is to add the olive oil little by little. We add it, tablespoon by tablespoon, beating until the oil is fully incorporated.

Reserve the Greek dressing

In this Greek dressing recipe, the olive oil and vinegar tend to separate after the initial whipping and during storage. It doesn’t matter: just open again before serving! If you prefer a dressing that won’t separate, try our Italian dressings, house dressings or balsamic dressings.

This Greek Dressing is an easy oil and vinegar dressing that takes less than 5 minutes to make: the perfect easy dressing for salads.


  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon onion powder
  • 1 teaspoon dried oregano
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 6 tablespoons olive oil

  1. In a medium bowl, whisk together red wine vinegar, lemon juice, Dijon mustard, onion powder, oregano, kosher salt, and black pepper.
  2. Gradually whisk in the olive oil, adding 1 tablespoon at a time and beating until incorporated until an emulsion forms. Serve immediately. Store in the fridge and bring to room temperature before serving (keeps at least 2 weeks). The bandage may come loose after sitting down, which is okay; Just whip it up again before serving. If you prefer a dressing that won’t separate, try our Italian dressings, house dressings or balsamic dressings.
