While we enjoy spending time in our kitchen, most days of the week we’re not up for big challenges. We usually save our culinary adventures for the weekend (although sometimes we find unexpected inspiration in the middle of the week!). Here’s some midweek inspiration for a dish that’s incredibly easy to make but still looks inspirational. (And you can benefit from local wintergreens if they’re readily available in your area!)

Make Greek quesadillas

Quesadillas are a favorite food for us, but we had never tried them with Mediterranean flavors. It turns out that the quesadilla lends itself well to ethnic interpretations (much like our experiences with Mexican and Greek pizza). We can’t wait to try new countries – but for now, Greece definitely fits!

The recipe below includes the ingredients we used, but it’s easily adaptable to suit the ingredients in your pantry and your individual tastes. We’ve found that the key ingredients for the Mediterranean flavor are feta cheese, oregano, and red onion, so we recommend saving these. But if, like one of our taste testers, you refuse olives, rest assured you won’t miss out on too much flavor! Greek Quesadillas are the ultimate quick and easy dinner ideas! The delicious filling consists of spinach, peppers, olives and feta cheese.


  • 8th Wholemeal tortillas
  • 2 cups fresh spinach
  • 1 Red onion
  • 2 roasted peppers in a jar
  • ½ cup Kalamata or black olives
  • 2 cups grated mozzarella cheese
  • ½ cup crumbled feta cheese
  • 1½ tablespoons chopped fresh oregano (or 2 teaspoons dried)
  • red pepper flakes (optional)

  1. Cut the spinach into thin slices. Thinly slice the red onion, roasted peppers and olives. Chop fresh oregano (if using).
  2. For each quesadilla, place one tortilla on a plate and evenly distribute ¼ of the spinach, red onion, roasted red pepper, black olives, mozzarella cheese, feta cheese, and oregano. Sprinkle with a few red pepper flakes (if using).
  3. Heat a large non-stick pan* over medium-high heat for a few minutes. Place the loaded tortilla on the griddle and place another tortilla on top. Fry until bottom is golden brown, then flip and cook on the other side until golden brown on each side, a few minutes.
  4. Take out the tortilla and cut into pieces with a pizza cutter. If you’re making multiple quesadillas at once, keep them warm in a 300°F oven.
