What are Greek fries? Are they authentic to Greek cuisine? Well, yes and no. The authentic Greek fries you would get at a restaurant are called Tiganite potatoes (here is an authentic recipe from a Greek recipe author). These are plump potatoes, usually a waxy potato like Yukon Gold, fried and topped with dried oregano.

You’ll also find that Greek or Mediterranean restaurants can prepare fries and top them with feta cheese and herbs. Some restaurants in Greece even serve them this way. There is no truly “authentic” definition of the exact topping for Greek fries. So, our Greek fries recipe is a twist on the Mediterranean flavors and style of fries we’ve enjoyed on our trips to Santorini.

Use a waxy potato like Yukon Gold

Standard fries recipes use russet potatoes to achieve the chewy texture that restaurant fries have. But in our research, we found that Greek fries recipes use a waxy potato like Yukon Gold. This has a smoother texture inside with a slightly sweeter taste. It definitely tastes like a different kind of fries! Use this variety of potato if you can find it, but Russian potatoes work just as well.

One more thing that makes this Greek Fries recipe special: our homemade Greek spice mix! This blend contains dried herbs and spices that are often used in Greek cuisine. These spices really make the dish! Make a batch and you’ll have leftovers to use in other recipes – we love sprinkling it over potatoes, sautéed veggies and fish. Here are the ingredients you will need:

  • Dried oregano
  • Dried dill
  • garlic powder
  • onion powder
  • salt and black pepper

The toppings in these Greek fries make them shine! Here are the fried toppings you need to add a touch of Mediterranean flair to this recipe:

  • Crumbled Feta Cheese: If you crumble them, use your fingers to break them up into small pieces. Very large pieces will not stick to the fries.
  • Red onion: If you don’t like spicy red onions, first rinse the chopped onion several times, then drain completely. This helps sweeten the taste.
  • Fresh parsley: Curled parsley is the right choice if you can find it: it brings out the best Greek flavor as in our quinoa tabbouleh. If you can only find flat leaf parsley or Italian parsley, that works too!

The most technical part of making these healthy Greek fries is slicing the fries! You can use two methods: cut by hand or use a chip cutter. Here’s what you should know about slicing french fries by hand:

  • Make a base: Cut off the ends of each potato, then cut off part of the side to form a bottom.
  • Cut boards, then strips: Place the half cut potato side down and cut a 3/8 inch disc, then set the disc on its side and cut into several long, 3/8-inch-wide strips. Repeat until all the potatoes are cut into fries!

Tips for making Greek fries perfectly crispy

Final point: how do you make these Greek fries perfectly crispy? Here are some of the tips we use to make a crispy skillet:

  • Soak the fries for 10 minutes while the oven preheats. This results in a perfectly soft interior and a crisp exterior.
  • use parchment paper. This makes cleaning easier and ensures crispy floors. Don’t use a silicone baking sheet or they will get too mushy.
  • Space them out as much as possible and keep them in a single layer. No stacking! To get each fries crispy, you’ll need as much space as possible (better yet, use a “half-tin” baking sheet big enough to fit the entire oven rack).

These Crispy Greek Fries are the ultimate side dish! They’re drizzled with Mediterranean-style toppings: feta cheese, onions, and herbs.


  • 6 medium Yukon Gold potatoes (1 1/2 to 1 3/4 Pound Sterling)*
  • 2 tablespoons olive oil
  • 1 tbsp homemade greek seasoning
  • ½ teaspoon kosher salt
  • ¼ cup the feta will fall apart
  • 2 tablespoons finely chopped curly parsley
  • 2 tablespoons finely chopped red onion
  • 4 Lemon wedges for serving
  • Optional: tzatziki, lemon dill sauce (our favorite), or aioli for dipping

  1. Preheat the oven to 425 degrees Fahrenheit. Space oven racks evenly to ensure even baking.
  2. Meanwhile, cut the potatoes into fries: (Watch this video or use a chip cutter.) Wash the potatoes, leaving the skin on. Cut off the ends of each potato, then cut off part of the side to form a bottom. Place the half-cut potato side down and slice a 3/8-inch slice, then set the slice on its side and cut into several long strips. Repeat until all potatoes are cut into fries. The pieces may be uneven, but aim for as uniform a thickness as possible. Watch the video for the full instructions!
  3. Soak in cold water (10 minutes): Place the sliced ​​fries in a medium bowl and rinse under cold water until the water runs clear. Then fill the bowl with cold water and leave for 10 minutes (while the oven preheats). Then drain the potatoes and pat dry with a clean towel.
  4. Seasoning fries: Place the fries in a dry bowl and toss with olive oil, Greek seasoning, and kosher salt. Line two baking sheets with parchment paper. Spread the fries out on the paper in straight lines and space them as widely as possible.
  5. Bake: Bake fries for 20 minutes. Remove from the oven and gently flip each fries. Return to oven (turning pans on top and bottom racks). Cook for a further 8-10 minutes until crisp and golden brown, being careful to cook as the cooking time depends on the thickness of the skillet and your oven. (If the majority of the fries appear soft, continue cooking for a few more minutes.)
  6. Season: Taste and add a few pinches of salt if you like.
  7. Garnish: Place fries on a platter and sprinkle with crumbled feta cheese, breaking large chunks into smaller pieces with your fingers. Add finely chopped parsley and red onion. Serve with lemon wedges and tzatziki or lemon dill sauce.

Remarks

*That makes a good amount of fries, but a lot less than a restaurant serving (it’s as expected!). The largest amount of fries that will fit on two baking sheets is 2 pounds, you can increase this amount if needed (adjust seasonings accordingly).
