A great way to mix up those morning eggs? Add goat cheese! The Omelet with goat cheese is, in our opinion, the starting point. Spicy goat cheese makes sticky, cheesy pockets in the salted eggs, punctuated by the onion finish of fresh chives. Omelettes are quick to make and once you get the hang of them, they’re great for breakfast or a fancy, made-to-order brunch. The goat cheese adds just the right amount of sophistication (but it works for 5-year-olds too: we tested it on ours!).

It’s amazing how much flavor can come from just a handful of simple ingredients! The earthy flavor of goat cheese adds a unique element to the already irresistible omelet. Here’s what you need:

  • eggs
  • Fresh goat cheesealso known Goat: sold in the log
  • chives
  • salt and pepper
  • olive oil, for cooking

If you like, you can get creative and add extra veggies: like a few handfuls of sautéed spinach, sautéed mushrooms, etc. Just make sure the veggies are cooked before adding them to the omelette.

Tips for making a goat cheese omelette

This goat cheese omelette uses the American omelet technique as opposed to the French technique like our classic omelette. You cook the eggs a little longer and form a semicircle instead of a roll. As you will see in the photo, it can be a bit of a free form! Here are some notes on the process:

  • Before you begin, read the entire recipe. The cooking process is quick. Go to the recipe below and read it quickly before you start.
  • Prepare everything before cooking. Prepare eggs, cheese and chives before lighting the fire.
  • In a small 8-inch skillet, cook the eggs until almost set, 2 minutes. The size of the pan is important to get the right size.
  • Add the goat cheese, then cut in half and cook for 1 minute. It’s okay if the top breaks a bit: it will stay together while cooking.

Make omelettes for a crowd

Would you like to prepare goat cheese omelettes during your receptions? Making them to order can be a little daunting, so here are some tips for the process:

  • In a large bowl, whisk together all of the egg portions. For each omelet, add about 6 tablespoons of eggs to the pan. It’s barely ½ cup, or just over ⅓ cup.
  • Keep cooked omelettes warm in a 200 degree oven while you make the other omelettes. Place them on a greased or parchment-lined baking sheet.

Accompany them with a simple green salad, hash browns, or homemade fries and healthy banana muffins for a delicious brunch! And don’t forget the mimosas.

  • 2 eggs
  • ⅛ teaspoon kosher salt
  • 2 grind freshly ground black pepper
  • ½ teaspoon the water
  • ½ tbsp olive oil
  • ¼ cup crumbled goat cheese (1 ½ ounces)
  • ½ tbsp chopped chives

  1. In a small bowl, beat the eggs. Whisk vigorously with the kosher salt, pepper, and water until the mixture is fluffy and all the egg whites are incorporated.
  2. Heat the olive oil in a small 8-inch non-stick skillet over medium-high heat. When the olive oil is simmering, add the eggs and cook without stirring for 2 minutes. Shake the pan a little to continue cooking the eggs evenly when they begin to set.
  3. When the egg is almost done, push one side of the omelet toward the center to allow uncooked egg to drain and cook underneath. Place goat cheese and chives on half of the egg circle. Gently fold the other half over the top (you can leave some of the filling exposed as shown). Cook 30 seconds to 1 minute until egg is fully cooked. Use a spatula to gently remove onto a plate and eat immediately.
