There’s a secret ingredient that makes them Additionally irresistibly delicious. And even though they’re vegan, literally anyone will love this recipe, regardless of their diet! Alex and I don’t always eat vegan, but this pancake recipe has become a family favorite. Our 3-year-old Larson can’t get enough (we kept hearing, ‘May I have it please one more Pancakes?”). Here’s what you need to know about making this special plant-based breakfast.

Ingredients in vegan pancakes

If you can’t use eggs or dairy, what Do You use? There are many ways, but we’ve stumbled upon a trick that makes them awesome. This is included in this vegan pancake recipe:

  • The secret ingredient: nut butter! You can use peanut butter, almond butter, cashew butter, or sunflower butter (for nut allergies). Nut butter replaces eggs and serves as a binding agent And it adds a savory richness to the taste. That makes these eggless pancakes absolutely irresistible!
  • Oat Milk or Almond Milk: Our favorite milk for cooking is oat milk, but you can use whatever you have on hand.
  • All-Purpose Flour and Whole Wheat Flour: The whole grain blend adds flavor interest.
  • Neutral Oil: Use any neutral oil, like organic grapeseed oil, canola oil, or even melted coconut oil. More below!
  • Light Brown Sugar: Or use any type of sugar you like; You can even substitute maple syrup and use a little less milk.
  • Cinnamon and Baking Powder: These usual suspects complete the list.

Which nut or seed butter should I use?

Speaking of nut butters… our favorite in this vegan pancake recipe is peanut butter! In fact, we almost titled this recipe Pancakes with peanut butter…but you can really use any kind of nut butter. Nut butter adds some plant-based protein to pancakes, which helps keep you full longer. Here are some notes on the taste of each:

  • Peanut butter: Our favorite! We recommend using all-natural, unsweetened peanut butter.
  • Almond butter: It has a more neutral taste. Be sure to get creamy almond butter for texture (some almond butters are coarser).
  • cashew butter: Another great choice with a neutral flavor! Cashew butter has a nice round sweetness to it.
  • Pecan Butter: Also works if you have a batch prepared!
  • sunflower butter: Dealing with a nut allergy? Use sunflower butter instead.

Which oil to use?

With these vegan pancakes you can also vary the oil! We like to use oil instead of butter in our pancake recipes for the very lazy reason that you can skip the butter-melting step. The good thing is that it’s an easy way to keep them vegan! (We do the same thing in our vegan quick breads, like vegan banana bread, vegan zucchini bread, and vegan pumpkin bread.) Here are some types of oils you can use:

  • Neutral Oil: Grape seed oil, vegetable oil, organic rapeseed oil, sunflower oil
  • Olive oil: Not our first choice as it has a stronger flavor but it would work here
  • Melted Coconut Oil: If coconut oil is your favorite, you can use that here too. Make sure to melt and cool before using.

Tips for cooking vegan pancakes

The last thing to remember about this vegan pancake recipe? How to cook them well. It may sound silly, but many home cooks make sloppy pancakes…us included! They are often overheated, causing the pancakes to burn on the outside and gooey on the inside. How to cook the perfect vegan pancake:

  • Low and slow is key! Make sure the heat is low to medium low! These vegan pancakes can burn more easily than the standard pancakes. Cook them too high and they will turn brown on the outside and gooey on the inside. But go low and slow and they will come out perfect.
  • When to change? When bubbles form and burst. Wait for bubbles to form on the surface and begin to burst. Sometimes it seems like you’ve waited too long, but trust us! This trick always works.

  • ½ cup all purpose flour
  • ½ cup whole wheat flour
  • ¼ teaspoon Cinammon
  • 1 tbsp baking powder
  • 2 tablespoons light brown sugar (or granulated sugar)
  • ½ teaspoon kosher salt
  • 2 tablespoons neutral oil (or melted and cooled coconut oil)
  • 2 tablespoons creamy peanut butter, almond butter, or cashew butter (or nut-free sunflower butter)
  • 1 ¼ cup plant-based milk (oat milk or almond milk)

  1. In a medium bowl, whisk together all-purpose flour, whole wheat flour, cinnamon, baking powder, sugar, and kosher salt.
  2. In a liquid measuring cup, whisk together the oil and peanut butter. Add it to the batter and then immediately add the milk.
  3. Stir the wet ingredients into the dry ingredients until a smooth batter forms.
  4. Lightly grease a pan with coconut oil and wipe off excess grease with a paper towel. Heat the pan over low heat. Pour the batter into small circles (just under ¼ cup each). Bake the pancakes until the bubbles burst on top and the bottom is golden brown: low and slow is key! Then turn them over and cook until done. Repeat with the rest of the batter, adjusting the heat as needed (the pan can get very hot during the second batch). Place cooked pancakes under an inverted bowl to keep warm. Serve immediately with maple syrup.
