Meet Andrea Bemis from the Dishing Up the Dirt website. She and her husband Taylor own and operate a 15-acre farm in Oregon called Tumbleweed Farm. It is the fairytale life of a millennium that cultivates the land and creates beautiful prints worthy of a glossy magazine. However, there is a lot of honest and hard work behind it. Farming is an intense and difficult way of life, and combining it with food blogging is an incredible feat.

In addition, Andrea has written and photographed a cookbook titled pick up dirt. It’s full of beautiful photos of seasonal produce on his farm and inventive ideas on how to use them. This gluten free quiche is one of Andrea’s recipes and is a fantastic overview of the recipes in this book.

The key to a gluten-free quiche

Leafing through Andreas’ book, this gluten-free quiche with an almond crust caught my eye. almond crust? Yes, please! Here are a few things to note about this irresistibly delicious gluten free quiche:

  • The almond crust steals the show. It consists of almond flour, olive oil, some garlic and fresh thyme. After cooking, it comes out crispy and WOW it is good! Alex and I almost prefer this gluten-free crust to the gluten-free crust (although our favorite quiche crust is pretty damn good).
  • Do this with each green leaf. The filling of the quiche is seasoned with shallots, white wine and Gruyère and sautéed green vegetables. The original recipe is for mustard greens, but you can use any leafy greens you like. Try it with spinach, Tuscan cabbage or Swiss chard.

The verdict of everyone at the table: Wow. It’s intensely flavorful, one of those dishes that you can’t help but mutter “it’s so good” over and over again. The description

This gluten-free quiche has an irresistibly crunchy olive oil and almond flour crust! Fill it with hearty spinach and Gruyere cheese.


For the gluten-free almond crust

  • 2 cups almond powder
  • 3 chopped garlic cloves
  • 1 tbsp chopped fresh thyme
  • ½ teaspoon fine sea salt
  • Pinch of freshly ground black pepper
  • Pinch of crushed red pepper flakes
  • ⅓ cup olive oil

For the quiche filling

  • 1 tbsp olive oil
  • 3 chopped shallots (approx ½ cup)
  • 3 chopped garlic cloves
  • 2 cups coarsely chopped green vegetables: spinach, chard or mustard greens
  • ¼ cup dry white wine
  • ½ cup whole milk
  • 4 eggs
  • ½ cup grated cheese
  • A generous sprinkling of freshly grated nutmeg
  • 1 teaspoon fine sea salt
  • Pinch of freshly ground black pepper

  1. Place a wire rack in the center of the oven. Preheat the oven to 400F. Grease a 9-inch cake pan or cake plate with oil.
  2. Prepare the crust: In a large bowl, whisk together the almond flour, garlic, thyme, salt, black pepper, and red pepper flakes. Stir in oil and 4 tbsp water. Mix until well blended. Press the dough into the cake pan, making sure it rises at least 1 ¼ inch on the sides. Bake until crust is lightly browned and firm to the touch, about 15 minutes.
  3. Meanwhile, prepare the filling: In a large cast-iron skillet, heat the oil over medium-high heat. Add the shallots and garlic and cook, stirring frequently, until the chunks are translucent and fragrant, about 5 minutes. Add the vegetables and continue cooking until they wilt a little. Add the wine and continue cooking until the moisture has evaporated. Remove the vegetables from the stove and set aside.
  4. In a large bowl, whisk together the milk, eggs, cheese, nutmeg, salt, and pepper. Add the cooked vegetables and mix well. Pour the egg mixture onto the pre-baked crust and bake for 30 to 35 minutes until the crust is golden brown and the center of the quiche has set. If the edges of the crust start to brown too quickly, place foil around the edges of the pan to prevent burning. Allow the quiche to cool for a few minutes before serving.
