If you’ve spent a lot of time online, you might have met one, two, or ten people that you’ve never met but feel like you’ve known them forever. We were lucky enough to find several connections like this, including Ashley from Edible Perspective. We bonded initially through our shared passion for gardening, photography and vegetarian recipes and more recently for home renovations. And now she’s publishing a cookbook, Baked Donuts for Everyone! This gluten-free donut recipe is a preview of the book, and boy is it despicable! While sweets aren’t usually our forte, we’re excited to find that Baked Donuts for Everyone’s gluten-free donut recipes are easy to make and packed with healthy flours like oat and almond flour. . There really is something for everyone in the book: from wholesome to hearty to decadent.

These Honey Pistachio Donuts are from the Healthy chapter and use a healthier version of the basic recipe. They were a fun project and turned out delicious with a sweet squishy cake and honey frosting. For this gluten-free donut recipe and all the recipes in the book, you will need a donut pan. Since donuts are baked, not fried, pour the batter into the pan.

For this gluten free donut recipe you will need some special flours: oat flour, pistachio flour, almond flour, flax flour and rice flour. The first four can actually be made at home by grinding them up in a food processor and/or spice grinder. Rice flour has to be purchased, but it’s pretty easy to find online these days.

Apart from these elements, the other ingredients of these gluten-free donuts are quite classic: oil, milk, egg, honey, applesauce; what you expect from standard baked goods!

How to make gluten free donuts

This gluten free donuts recipe couldn’t be easier to make! Simply mix the dry ingredients in one bowl and the wet ingredients in another, then blend the two together. Pour the batter into the donut mold and bake for about 20 minutes.

About the book: Baked Donuts for Everyone

We thought we’d sit down with Ashley and ask her a few questions to provide more information about the Baked Donuts for Everyone book. We’ve provided a summary of the discussion below (although we originally recorded it live, the quality was such that we couldn’t fucking share it with you!). Thanks to Ashley for her time – and it was so nice to finally be able to speak “in person”.

How did this cookbook come about? Spurred on by the growing popularity of baked donut recipes, a publisher approached Ashley with the idea of ​​creating a cookbook. She saw that Ashley already had several variations of gluten-free donut recipes on her blog. To give the editor an idea of ​​her recipes, Ashley even sent donuts to the editor overnight as they tried to decide if it was right for them (I think it convinced them!). After getting the job, she developed and photographed all the recipes in her own kitchen in just 3 months.

And the basic recipe? Ashley doesn’t typically work with gluten-free all-purpose flours, preferring healthy flours like oatmeal and almond flour. She tried to find a basic donut recipe that used relatively easily available flours (e.g. you can make your own oatmeal in your food processor).

Wow, 100 donut flavors! How did you find her? Ashley told us she made a huge list and emailed all her family and friends asking for their favorite donuts and flavor combinations. She also turned to Jeni’s Ice Cream (Ohio’s famous ice cream shop) for interesting flavor combinations like chocolate cayenne pepper and blackberry basil.

Ashley’s favorite recipes? Apple pancakes, carrot cake, chocolate cinnamon roll, red velvet (colored with beet puree, of course), and tiramisu are some of Ashley’s favorites, as are the heartiest chapter options (like garlic spinach, jalapeno cheddar, and stuffed Greek with feta cream cheese spread).

  • ½ cup oats or oatmeal
  • ¼ cup pistachios or pistachio flour
  • ¼ cup Almonds or ground almonds
  • 2 tablespoons Flaxseed or ground flaxseed flour
  • ¼ cup sweet rice flour
  • 1 teaspoon baking powder
  • ½ teaspoon Salt
  • 1 big egg
  • ⅓ cup milk
  • ¼ cup Honey
  • ¼ cup unsweetened applesauce
  • 1 tbsp oil
  • 1½ teaspoons vanilla extract
  • ¾ cup ground pistachios
  • ⅛ teaspoon Salt (if the pistachios are unsalted)
  • ¼ cup Honey

  1. Preheat the oven to 350F and grease your donut pan.
  2. If using whole oats, pistachios, almonds, and/or flaxseeds, follow these steps: In a food processor, grind ½ cup oats to a fine flour. Next, in a coffee grinder or food processor, grind ¼ cup pistachios into a fine flour and do the same with ¼ cup almonds and 2 tablespoons flaxseeds (separately).
  3. In a large bowl, mix together the oat flour, pistachio flour, almond flour, and flax flour with ¼ cup sweet rice flour, 1 tsp baking powder, and ½ tsp salt. In a separate bowl, whisk the egg. Then add ½ cup milk, ¼ cup honey, ¼ cup applesauce, 1 tablespoon oil, and 1½ teaspoons vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir with a large wooden spoon until well combined. Be careful not to mix too hard (stop when you don’t see any more dry flour).
  5. Pour the batter into the donut pans, filling to just below the top of each pan. Bake for 18 to 22 minutes, until lightly browned around the edges. A toothpick inserted in the center should come out clean. Leave to cool in the pan for 5 minutes. Slide a thin spatula around the edges of the donuts to loosen them. Then place on a cooling rack and let cool completely before filling.
  6. For the filling, chop ¾ cup pistachios. In a bowl, combine the pistachios and salt (if using unsalted nuts). In a microwave-safe bowl, add ¼ cup honey and microwave until heated through, about 20 seconds. Place parchment paper under the cooling racks, then generously drizzle honey over the donuts. Garnish each donut with ground pistachios. Let cool and serve.
