Here’s a recipe to celebrate all things green: green hummus! It’s a bright and fun twist on good old hummus. Alex and I have made this green hummus several times as a lunchtime recipe. Since we just eat at the office, it’s great as a snack with some veggies or pretzels. We first made it in honor of St. Patrick’s Day (yes, green food!). But because it was so delicious, we’re now making it for all sorts of other occasions as a party appetizer. Read on for the green hummus recipe!

How to make green hummus

We’ve started making hummus as often as we can because it’s cheaper than buying it — and we get to play around with some interesting flavors. The vibrant color of this green hummus comes from spinach, cilantro, and green onions. There’s some lime juice for a little spice. And of course the ubiquitous garlic!

To make it creamier, we also included tahini in this green hummus recipe, a standard hummus ingredient. In case you’ve never bought tahini, it’s a sesame seed paste typically used in Middle Eastern or Mediterranean dishes. Tahini is Vegan, Vegetarian, Gluten-Free, Paleo, Keto, and Whole 30, so it’s suitable for many diets. Once you’ve assembled your ingredients in your food processor, puree them right away! If you don’t have a food processor, it’s perfect for mixing dips, hummus and veggie burgers: we use ours ALL THE TIME. This is the food processor we’re using.

This green hummus is a healthy and delicious snack recipe made with scallions, spinach, cilantro, and lime. Snacking just got more fun!


For the green hummus*

  • 1 small clove of garlic
  • 1 15 ounces chickpeas (or 1 ½ cups cooked)
  • ¼ cup lime juice (2 Lemons)
  • 2 Green Onions
  • ½ cup packed coriander leaves and tender stems
  • 2 cups spinach leaves
  • ¼ cup tahini
  • ¼ teaspoon cumin
  • ¾ teaspoon kosher salt
  • ¼ cup Aquafaba (liquid canned chickpeas) and more as needed

For garnish

  • Olive oil, coriander leaves, crispy chickpeas

  1. Peel the garlic. Drain the chickpeas into a liquid measuring cup. Squeeze limes. Cut the scallions into 1-inch pieces, including the greens.
  2. Place the garlic, cilantro, spring onion, and spinach in the bowl of a food processor and pulse until finely chopped. Add the chickpeas, lime juice, tahini, cumin, kosher salt, and water from the canned chickpeas (aquafaba). Blend for 30 seconds, then scrape out the bowl. Taste good. Add 1-2 tablespoons of aquafaba if needed. Blend for 1 to 2 minutes to get a creamy consistency. Store in the fridge for 7-10 days.
  3. If you like, garnish the hummus with coriander leaves, some olive oil and crispy chickpeas. Serve with veggies, flatbread, or crackers (like these homemade crackers!)

Remarks

*For a spicy version, you can add some jalapeño pepper.
