A few years ago my sister and I were thinking of fun things to do while spending time together over the holidays. “Gingerbread Pancakes!” I remember an exclamation. For some reason they seemed like the perfect representation of all things comfy back then. I could imagine it: our house in the snow and my sister and I eating gingerbread in our pajamas. So Alex and I created a recipe for Spicy and Hearty Gingerbread Pancakes for the occasion – and they really are everything I imagined.

Gingerbread Pancakes… with a savory twist of oatmeal!

Alex and I are pretty picky about our pancakes. The standard pancake recipe is loaded with all-purpose flour and sugar so we’re literally starving 1 hour later. Honestly, I’m more hungry in the morning after eating an all-purpose flour pancake than if I didn’t eat at all! So Alex and I started adding a lot Rolled oats (ground oats) to our pancakes. The result is a delicious crepe packed with nutrients And fills you up for hours! We used this trick on our gingerbread pancakes and it makes a hearty and healthy breakfast or brunch.

How to make oatmeal at home? If you can find it, you can buy oatmeal for this recipe – it just got a lot easier to find at the grocery store. But since we always have oatmeal on hand, it’s easier for us to make our own oatmeal! Place the oatmeal in a high-speed blender or food processor and puree until the consistency is flour. The amounts are 1 to 1: 1 cup of oats is equivalent to 1 cup of oatmeal. As simple as that!

We made these pancakes with our toddler and he loved it! At around 2 p.m. he was able to help fill in the ingredients. At almost 3 years old he is a pastry chef pro!

Tips for making gingerbread pancakes!

These oatmeal pancakes contain gingerbread spice ingredients to give them the same flavor as the signature cookie: cinnamon, ginger, and allspice. For a bit of authentic flavor there’s a hint of molasses! The dark depth of the molasses really makes these gingerbread pancakes shine. Here are some tips for preparing a batch:

  • Add a little milk before cooking each batch. The batter of these pancakes is thick because the oats absorb more liquid than a pancake made entirely of flour. Before each cooking on the griddle, add a little milk to achieve a pourable consistency.
  • Garnish with some maple syrup. Pour some pure maple syrup over these pancakes and they taste like gingerbread batter! Using a hint of maple really helps bring out the flavors.

Holiday tip: use a pancake pan!

For even more holiday fun, use a pancake pan for these gingerbread pancakes! Alex and I made these pancakes using a gingerbread man pancake pan and it was a fun activity to do with our toddler! Kids (and adults) love it. Here’s the gingerbread pancake pan we used. Of course, they’re just as good in circle form, so just a fun bonus: not required!

Can we make them gluten free?

Yes! These gingerbread pancakes are perfect for a holiday breakfast; We’re making them for brunch on Christmas Day! They’re easy to make into gluten-free pancakes: Because they’re mostly rolled oats, all you have to do is substitute ¾ cup all-purpose flour for the 1:1 gluten-free flour. It’s possible that you could use other alternative flours to continue here (like almond flour or others), but we haven’t tested it. Let us know if you try it!

These Gingerbread Pancakes are packed with cozy spices and molasses! They’re made from oatmeal, so they’re hearty and filling.


  • 1½ cups old-fashioned oats or oatmeal
  • ¾ cup all-purpose flour (or 1 for 1 GlueTen free flour)
  • 2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 1 teaspoon Cinammon
  • 1 teaspoon ground allspice
  • ½ teaspoon kosher salt
  • 2 eggs
  • 2 tablespoons pure maple syrup, plus more for serving
  • 2 tablespoons molasses
  • 1 cup milk
  • 2 tablespoons vegetable oil

  1. For Homemade Oats: Place oats in a high-speed blender or food processor and puree until smooth. If using oatmeal, skip this step and just use 1 ½ cups of oatmeal.
  2. In a medium bowl, combine oat flour, all-purpose flour (or gluten-free flour), baking powder, ginger, cinnamon, allspice, and kosher salt.
  3. In another medium bowl, beat the eggs, then stir in the maple syrup, molasses, milk, and vegetable oil. Add the dry ingredients and mix until a paste forms. Let the dough rest for 3 minutes to allow it to thicken.
  4. Lightly grease a pan with butter and wipe off excess fat with a paper towel. Heat pan over medium heat.
  5. Add a little milk to the batter to give it a pourable consistency. Pour the batter into small circles and fry the pancakes until bubbles burst on top. Then turn and heat until cooked through and lightly browned. For each additional batch, add a little milk before pouring onto the griddle, until the consistency is runny and not too thick (the oats will continue to absorb moisture, so this is the easiest method). reliable for oatmeal pancakes).
  6. Serve immediately with a drizzle of pure maple syrup. Without the syrup, the pancakes taste slightly sweet, but the addition of syrup really brings out the flavor of the gingerbread!
