Ginger Vinaigrette

Here’s a delicious dressing that will make any bunch of veggies taste infinitely better: give it a try Ginger Vinaigrette! This sunny vinaigrette combines rice vinegar, honey and oil with the earthy spiciness of fresh ginger root. Wow, does it need a salad on top! It goes well with almost everything from salads to roasted vegetables. This is a simple take on the concept, but you can add soy sauce for a more Asian-inspired twist. That’s how it’s done!

Ginger Vinaigrette Ingredients

Ginger dressing is an American dressing that contains East Asian ingredients like fresh ginger root, rice vinegar, and honey. Often it also contains soy sauce or sesame seeds. This ginger dressing is an easy, fresh and flavorful dressing made with white wine vinegar, Dijon mustard and honey. But there are a few variations with Asian-inspired flavors using soy sauce or sesame oil (see below)! What you need for this recipe:

  • ginger root
  • rice vinegar
  • Dijon mustard
  • honey or maple syrup
  • olive oil or neutral oil
  • Salt

This dressing is a blender dressing that we often try to avoid (since we’re lazy and don’t like cleaning out our blenders). Here’s why you should use your blender in this ginger dressing:

  • It spreads the taste of ginger. This will integrate it into each spoon better than if it were grated and whipped.
  • It makes a smooth texture. The grated ginger has a lumpy texture, but the mixture makes everything creamy and smooth!
  • If you have a standard mixer, double it! For mixing you need larger quantities. But if you have a small blender or hand blender, the amounts in the recipe below will work.

Ginger Dijon Vinaigrette

  • 1½ tablespoons grated ginger, lightly packed (about 2 inches of pimple)
  • 2 tablespoons white wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey (or maple syrup)
  • ½ cup neutral oil (grape, organic rapeseed, organic vegetable oil or peanut oil)
  • ¼ teaspoon garlic powder
  • ½ teaspoon kosher salt

  1. Peel and chop the ginger with a spoon.
  2. Combine all ingredients in a small blender or hand blender; or double the recipe and blend in a standard blender. (A smaller amount will not blend in a large blender or food processor.) Refrigerate up to 1 week; allow to come to room temperature before serving.
