These sweet potato brownies are next level. Everyone who’s tried them comes back with one word: “Wow!” We love a chewy brownie here, and the sweet potato adds just the right chewy, chewy texture. Here are some of the main ingredients that make up this recipe:

  • Frying the potatoes caramelizes them and brings out the sugar. Totally worth the 30 minute roast time.
  • Cut them in half before frying! This reduces the time it takes to fry compared to frying whole.

Make them gluten free!

Want to make these gluten-free vegan sweet potato brownies? It’s an easy swap for flour! By using sweet potatoes, you can use a lot less flour than you would with a traditional brownie. There’s only ½ cup of flour in the whole pan! Here are some trades for flour:

  • Try oatmeal (or make your own). Oatmeal is our favorite gluten-free flour: it makes delicious gluten-free products like healthy pumpkin bread or oatmeal pancakes. It’s also easy to prepare: just run the oatmeal through a blender or food processor until fluffy. It’s an easy trade here.
  • Or use your favorite gluten free flour. Most gluten free 1:1 flour mixes will work here!

  • It’s a treat: they contain a lot of sugar! Make no mistake: these are treats for sure.
  • Sweet potato adds fiber, vitamin A and vitamin C. Brownies don’t usually contain fiber or vitamins, so that’s a plus! A pound of sweet potatoes provides 357% of the daily allowance for vitamin A and 13 grams of fiber.
  • Almond butter adds protein and heart-healthy fats. Instead of butter, almond butter adds plant-based protein, making it a filling treat.

At the end of the line: These vegan sweet potato brownies aren’t a healthy food, but they’re a healthier treat compared to a standard brownie.

These amazing sweet potato brownies will blow everyone away! Fondant and soft, they’re full of flavors…good things too. Vegan with gluten free exchange.


  • 1 ½ cups Mashed sweet potatoes (approx. 1 book or 2 medium potatoes)
  • ½ cup creamy almond butter (replace cashew butter or sunflower butter if you have allergies)
  • ½ cup cocoa powder
  • ¾ cup Sugar (granules or coconut)
  • ½ cup all-purpose flour (or gluten-free flour)
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • ½ teaspoon kosher salt
  • ½ cup dark chocolate chips (dairy-free if desired)

  1. Preheat the oven to 400 degrees Fahrenheit. Wash and halve the sweet potatoes. Place them on a parchment-lined baking sheet and brush with olive oil, just enough to cover. Sprinkle lightly with kosher salt. Place cut-side down on baking sheet. Bake until tender and lightly browned around the edges, about 30 to 35 minutes, depending on the size of the potatoes (small potatoes may take 25 minutes; pierce with a fork to gauge doneness).
  2. Reduce oven heat to 350 degrees Fahrenheit. Line a 9×9 or 8×8 pan with parchment paper (so it extends past the sides for later lifting, or just a square if you plan on slicing them into the pan). Then grease the entire mold and parchment paper.
  3. Remove the skin from the sweet potatoes and mash, measuring 1 ½ cups. Add almond butter, cocoa powder, sugar, flour, oil, baking powder, vanilla, and kosher salt until a thick paste forms. Stir in ¼ cup dark chocolate chips. Pour the batter into the pan and smooth the surface with a spatula. Sprinkle the remaining ¼ cup chocolate chips on top.
  4. Bake for 30 minutes, until firm but soft in the center. Cool down for 1 hour. Degrees Fahrenheit. Store 3 days at room temperature, 1 week in the fridge or 3 months in the freezer.
