This recipe was born because our son Larson Love Muesli with his yoghurt every morning. Alex and I have found that so many brands and recipes contain too much sugar and oil. Many recipes are also high in calories. Some of them contain 500 calories per ½ cup serving! Our goal when preparing a healthy granola recipe was to stick to around 200 calories per serving. The following tips helped us create a healthy, nutrient-dense cereal that met our calorie goal:

  • puffed rice is a great way to add texture to a low-calorie whole grain cereal! Puffed rice is actually a minimally processed whole food product: it’s simply rice that’s been puffed to make it crispy. You should be able to find puffed rice cereal at your local grocery store.
  • Reduce nut content helps reduce calories in a healthy muesli. It’s just the right amount of nuts to add textural contrast and fill the granola with protein, but not so much that it overwhelms the granola.
  • Reduced oil and maple syrup It also helps reduce calories and sugar compared to other granola recipes. All of these components combine to create a delicious and healthy granola recipe!

How to Make a Healthy Granola Recipe (Basic Steps)

How do you make this healthy granola recipe? If you’ve never made homemade granola before: now’s the time to start! It’s that simple and you know exactly what ingredients are in it. No sneaky additives or preservatives here! Here are the basic steps to making granola at home:

  • Mix the wet ones. In a large bowl, combine the wet ingredients: neutral oil, maple syrup, and vanilla. Add cinnamon and allspice: Allspice is optional but adds a nice spiciness to the granola.
  • Add the dry ones. Then stir in the dry ingredients: rolled oats, puffed rice cereal, and pecan halves. You can use any type of nut, but we especially love the flavor of pecans in granola.
  • Spread onto a baking sheet lined with parchment paper. Line a baking sheet with parchment paper (this will help with cleanup). Then spread the granola on top in an even layer.
  • Bake! Place in the oven and cook for about 25 to 30 minutes, stirring once.
  • Cool. When you take the granola out of the oven, it will feel a little gooey. Let cool completely and it will crisp up as it cools. Then put it in an airtight container: we keep ours in a jar on our counter.

Ways to serve healthy granola

This healthy granola recipe is our new go-to! I don’t think we’ll be making another recipe (really). It’s super crunchy, with just the right texture, warm spiciness, and a hint of sweetness from the maple. The puffed rice provides crunch without adding too many calories, and the roasted pecans are sweetened with cinnamon. There are so many ways to serve it:

  • On yogurt. Try plain Greek yogurt with a little honey or maple syrup. Garnish with berries!
  • With milk or plant milk. It works well as a vegan breakfast or snack idea with either almond milk or oat milk (our favorite).
  • On a smoothie bowl. Try our homemade acai bowl or use it as a topping for a simple smoothie bowl.
  • Sprinkle over the muffins before baking. Use leftovers from our Mixer Muffins or Banana Blueberry Muffins.
  • On apple chips. Did you know you can make Instant Pot Crispy Apples with granola? Or sauté apples with cinnamon, then toss the muesli on top (vanilla ice cream optional!).

  • ¼ cup neutral oil
  • 2/3 cup maple syrup
  • 1 tbsp vanilla extract
  • 2 teaspoons Cinammon
  • ½ teaspoon pimento
  • ¼ teaspoon kosher salt
  • 3 cups old-fashioned organic oatmeal
  • 3 cups Puffed rice (substitute oatmeal if you can’t find puffed grains!)
  • 1 cup pecans

  1. Preheat oven to 350°F.
  2. In a large bowl, combine oil, maple syrup, vanilla, cinnamon, allspice, and salt.
  3. Add oatmeal, puffed rice and pecans. Stir well with a wooden spoon.
  4. Spread onto a parchment-lined baking sheet and bake, stirring once, until golden and toasted, about 25 to 30 minutes.
  5. Remove from the oven and allow to cool completely: The granola will crisp up as it cools. Store in an airtight container.
