It’s been a busy season for Alex and I, even busier now as we prepare to put our house on the market. We cleaned and organized our house from top to bottom and completed all the things on the to-do list that never seemed to get done. It’s amazing how therapeutic decluttering a closet or reorganizing a pantry can be! In the midst of the cleaning madness, we decided to take a lunch break. We needed something quick, easy and delicious. And at that moment this Farfelle pasta was born.

An easy pasta recipe created in a moment of hunger!

Somehow this Farfalle Pasta Salad was created using only ingredients we had on hand in a moment of hunger! We had fresh dill in the garden, feta crumbles in the fridge, and green peas in the freezer. We decided to go there and make a quick farfalle pasta salad. It turned out really good so we knew we had to share this recipe.

Thanks to Jeanine for the bright idea of ​​putting a crushed clove of garlic in the vinaigrette while the pasta is cooking and then removing it before enjoying. We loved this pasta and couldn’t get enough. This would be a wonderful dish to bring to a pitch or potluck because it’s so easy to make.

We have never been tidy and organized, but the older we get, the more we long for the pleasant feeling of clean, tidy living spaces and the thought of simple living. We cleaned out our closets like crazy, which is actually quite cathartic – sort of a soul cleansing. Gone is the old, dusty, and messy, and make way for a more conscious, cleaner, and simpler way of life (fingers crossed!). And this easy farfalle pasta is a great place to start.

How to make Farfalle Pasta with Peas and Dill

This farfalle pasta recipe is incredibly easy to make and ready in under 30 minutes. Here are the basic steps:

  • Cook pasta in salted water al dente. Add the frozen peas for the last minute or so. Then drain the pasta and peas and hold them under cold water to stop them from cooking.
  • While the pasta is cooking, prepare the vinaigrette, a simple combination of oil, vinegar, salt, and pepper. Add a crushed clove of garlic to the dressing and let it soak in the dressing while the noodles cook. Garlic leaves a subtle flavor that doesn’t overwhelm the dish.
  • When pasta is done, toss with dressing and crumble over feta cheese and sprinkle with chopped fresh dill.

These farfalle pastas are best eaten right away, but leftovers keep well in the fridge if stored in an airtight container.   • 1 Pound Whole Wheat Farfalle Pasta
  • 1½ cups Peas (frozen or fresh)
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 clove of garlic
  • ⅔ cup crumbled feta cheese
  • ⅓ cup chopped fresh dill
  • Additional salt and pepper to taste

  1. Start a pot of boiling salted water (with ½ tablespoon kosher salt). Add pasta and cook al dente; at the last minute, add 1 ½ cups of peas to boiling water. Drain the pasta and peas and rinse briefly under cold water to cool.
  2. While the pasta is cooking, in a bowl, whisk together 2 tablespoons olive oil, 2 tablespoons white wine vinegar, ¼ teaspoon kosher salt, and ¼ teaspoon black pepper. Crush 1 clove of garlic and add to bowl to marinate while pasta cooks.
  3. When the noodles are done, remove the garlic clove from the dressing. Pour the dressing over the drained pasta and add ⅓ cup crumbled feta cheese and ⅓ cup chopped fresh dill. Garnish with additional kosher salt and freshly ground pepper to taste.
