Here’s a recipe for pea sprouts if you can find them at the farmers market! This sophisticated toast features pureed chickpeas, cream cheese and pea sprouts.

There is nothing tastier than bright and happy pea sprouts after a long gray winter. We found them a few weeks ago at the winter farmer’s market, where the farmer happily cut a bunch of sprouts in a small apartment. But how do you make a recipe for pea sprouts? What are pea sprouts?

First things first: what are pea sprouts? Pea sprouts are easy Peas that are cut before they become real peas. The fun part is they taste like a bite of concentrated spring; like a pea, but more tender and leafy. You can use them in salads, stir-fries, sandwiches, etc. You can also grow them in your garden: simply harvest the pea plants when they look like tender shoots, before they become pea plants.

How to make this pea sprouts recipe

For our pea sprouts, we opted for… fancy toast! Here we have prepared refined toasts or one toast – French for “open sandwich”. This pea sprouts recipe combines tender green sprouts with delicious Greek yogurt cheese from our farmers market (from Trader’s Point Creamery here in Indianapolis). We also added chickpea puree for a little extra protein – which was pretty good on its own! If you can’t find yogurt cheese, you can use any type of cream cheese or even make homemade yogurt cheese (it’s actually quite simple – here’s our Labneh/yogurt cheese recipe).

Here’s a recipe for pea sprouts if you can find them at the farmers market! This sophisticated toast features pureed chickpeas, cream cheese and pea sprouts.


  • 15-oz can of chickpeas (or 1½ cups cooked)
  • 1 tbsp olive oil
  • ½ tbsp balsamic vinegar
  • ½ teaspoon kosher salt
  • Ground fresh pepper
  • 6 Slices of farmhouse bread
  • 6 ounces Cream Cheese or Yogurt/Labneh Cheese (we used Greek Honey Lemon Yogurt Cheese from Trader’s Point Creamery)
  • 1 Bunch of pea sprouts

  1. Drain and rinse the chickpeas if using canned. In a small bowl, mash the chickpeas, olive oil, balsamic vinegar, kosher salt, and freshly ground pepper with a fork.
  2. Cut the bread slices and toast as desired. Place each slice of bread face up on a plate, spread with cream cheese and chickpea puree and garnish with pea sprouts.
