A few weeks ago we went to New York to cook for our new book, Pretty Simple Cooking, on the TODAY Show. Embarrassing truth: This was the first time Alex and I had returned to New York since we were teenagers! Yes, please laugh. We had wanted to visit New York for years, mostly because we were into food, but for some reason other trips got in the way. (Amalfi Coast, Rome, Greece, Santa Fe, Alaska…) So finally we had an excuse to stay in town for a few days and eat. NYC restaurants and a source of inspiration

New York City can polarize: you love it or you hate it. Well, Alex and I both fell in love immediately. The architecture, the history, the melting pot of so many cultures and the FOOD. It’s not even just the food itself: it’s an energy to be surrounded by hundreds of years of food culture. Having lived in Indianapolis for 14 years, I don’t have the rich food history that we might feel in New York. The Indy food scene has taken off and we love it: NYC gives a glimpse of what Indianapolis restaurants could one day be. We’ve had some great meals in New York. Among them: Dirt Candy, a really imaginative vegetarian restaurant run by a female chef, and my favorite Via Carrota, the best Italian I’ve had outside of Italy. But today’s recipe is inspired by a ruthless New York culinary experiment: the bagel.

Yes, the bagel. While we were in New York, Alex was determined to find a good bagel shop. I was a big fan of bagels in college, but later in life I realized they weren’t quite the blueprint for healthy eating. Since then, I’ve largely avoided bagels to avoid giving in to my old obsession. But in this case I said to myself: when I’m in Rome, right? If you’re in New York, eat a bagel. I had forgotten my obsession with the Everything Bagel flavor until I walked into this bagel shop. The aroma of fresh bagels and the light onion-garlic spice smell of Everything Bagel brought back all sorts of memories. My Everything Bagel was coated in an extreme amount of Garden Herb Cream Cheese, and it was everything a bagel experience should be: gooey, flavorful, creamy, salty, and in great shape.

Since bagels aren’t part of everyday life, I thought, what if we could bottle the Everything Bagel and put it in a meal? Eh, pasta any bagel?

How to make all bagel pasta

Any noodle bagel? Yes. A thousand times, yes. This Everything Bagel Pasta is everything you love about Everything Bagel rebuilt into pasta. And it’s so, so easy: It only takes 3 ingredients and 15 minutes to prepare! It’s really surprising how well it turned out. When I told Alex I was going to try this Everything Bagel Pasta, he wasn’t sure if my idea of ​​pairing cream cheese with pasta water and Everything Bagel seasoning was right to Simply. But when he took the first bite, he was sold. It tastes like a bagel tout! And Everything Bagel Pasta was born.

A few notes on this Everything Bagel Pasta:

  • Our Everything Bagel Pasta features our homemade Everything Bagel Seasoning. Of course, you can definitely use store-bought Everything Bagel Seasoning to make it even easier.
  • For a healthy dinner, we recommend pairing Everything Bagel Pasta with Greens for a Healthy Dinner: Here we used broccoli without feta from Pretty Simple Cooking. Or prepare a fresh green salad.
  • For the sauce, the cream cheese is mixed with a little pasta water to form a creamy sauce. The amount of water will vary, so add just enough to make your pasta very creamy.
  • Noodles are best served immediately. It gets a bit sticky when sitting; If you like, you can reheat it in the serving pot and add some more pasta water and salt. The leftovers the next day will have a stickier consistency.
  • We’ve added some optional topping ideas: sliced ​​scallions for a ‘scallion and cream cheese’ option, or a little grated Parmesan cheese for a sophisticated twist. But we like it the way it is: plain and simple!

This all-bagel pasta takes the magic of an all-bagel and puts it into a delicious dinner form. It only takes 15 minutes to make this easy vegetarian dinner recipe!


  • 1 Pound linguine, gluten-free if requested
  • ½ cup whole cream cheese (1/2 To block)
  • Just ¼ cup seasoning for each bagel, or the following:
    • 1 tbsp Sesame seeds
    • 1 tbsp Poppy
    • 2 teaspoons dried onion flakes (chopped onion)
    • 2 teaspoons dried garlic flakes (minced garlic)
    • 1 teaspoon coarse sea salt or kosher salt
  • Optional side dishes: spring onions, parmesan

  1. Bring a large pot of well-salted water to a boil. Cook the pasta al dente for about 11 minutes (see packet instructions). Using a glass measuring cup, collect 1 1/2 cups of hot pasta water, then drain the pasta.
  2. Put the noodles back in the pot. Add cream cheese (cut into blobs), sesame seeds, poppy seeds, onion flakes, garlic flakes, and sea salt. Pour in about ¾ cup pasta water and mix until a creamy sauce forms; Add a little more water if needed to achieve a creamy consistency. Serve immediately, garnishing with additional salt if desired (depending on amount of pasta water added). Noodles are best served immediately. Remarks
