I read a book called Simplicity parenting, where I found the above quote. The premise is that the complexities of our modern world seep into the lives of our children, making them anxious and much less childish. We need to set boundaries to allow children the creative expression, spontaneity and risk-taking that is a natural part of childhood! And let’s translate that into our adult lives as well. I contend that simple striving can only be a rephrasing of our current reality. We don’t have to make enemies of technology or media consumption. We can just be creative with the time and resources we have and draw boundaries where necessary.

So! These Chive Blossom Eggs are the simplest of the easy: a 5-minute meal that’s great for breakfast, lunch, or even a light dinner. Alex recently made this on a whim with chives and chive flowers from our garden. While it looks great, it only needs 5 ingredients and takes 5 minutes. And the assembled flavors are a little heavenly.

Example: Simplicity in food doesn’t have to be tasteless or take hours to achieve great taste. A busy day doesn’t mean you don’t have to cook, it just calls for creative and simple solutions.

  • 2 tablespoons olive oil
  • 3 Chive stalks with chive flowers
  • 2 eggs
  • Kosher salt
  • 1 English multigrain muffin

  1. In a small skillet, heat the olive oil over medium-low heat. Roughly tear the chives and blossoms into 2-3 inch pieces and add them to the olive oil to heat for 30 seconds. Crack the eggs into the pan, add a pinch of kosher salt and continue cooking over medium-low heat until the whites are cooked through but the yolks are still runny, about 2 to 3 minutes (at 1 minute, gently lift the pan shake to distribute the eggs).
  2. Meanwhile, toast the English muffin. When the eggs are cooked, slide them over the English muffin halves and eat them with a knife and fork.
