  • 1 can of white beans* (or cannellini beans)
  • ½ cup diced red peppers (alternatively sliced ​​ripe cherry tomatoes, depending on the season)
  • 1 tbsp finely chopped red onion or shallot
  • 2 tablespoons finely chopped parsley (or tips of spring onions or other herbs)
  • 1/2 at 1 olive oil
  • 1/2 at 1 tablespoons of red wine vinegar
  • ½ tbsp Dijon mustard
  • ¼ teaspoon kosher salt
  • Freshly ground black pepper
  • 2 tablespoons Feta cheese (omit for vegans)

  1. Drain and rinse beans.
  2. Dice peppers. Slice the red onion and chop the parsley.
  3. Mix all the ingredients together in a bowl (if eating right away, use ½ tablespoon oil and vinegar; if making in the fridge or for a party where there is space, use 1 tablespoon).
