This recipe comes from a day when Alex took stock of our pantry and whipped up an easy homemade vegetable soup. We’ve been doing it ever since! This easy veggie soup is packed with colorful veggies and a cozy spiral noodle swimming in a bright yellow turmeric broth with tons of flavor. It’s like canned soup but a homemade version with flavor infinite better. That’s how it’s done!

This vegetable soup recipe is the definition of Simply. It’s a homemade take on canned noodle soup, but we’ve supercharged it with healthy veggies and fortifying spices. Here are the key steps for this easy vegetable soup (or jump straight to the recipe below!):

  • Prepare the vegetables: Dice an onion, bell pepper, carrot and celery.

Many vegetable soup recipes involve potatoes or squash, and here’s the thing: chewy root vegetables take a long time to cook. So for this soup we went with veggies that cook in no time! This recipe is an update to our previous version, which it loads with even more vegetables. Here are what we think are the perfect quick-cooking vegetables for the most healthy punch:

  • Onion

  • Green beans
  • White beans like Cannellini or Great Northern
  • Peas

Secret spice mix for broth

It’s easy to make a vegetable soup recipe, but often the broth leaves a lot to be desired. The veggie broth itself is a bit bland, so you’ll need a great blend of spices to enhance the flavors. Here’s what we included in this broth to make it satisfying and slurpable:

  • garlic powder
  • Dried Basil
  • Dried oregano
  • dried thyme
  • ground turmeric

What is turmeric? Turmeric is a bright yellow spice that belongs to the ginger family. It is most commonly used dried and ground and has an earthy, almost mustard-like flavor. Since turmeric has potentially strengthening properties and we love the taste, we added a healthy amount of this golden spice to create a vibrant broth. It looks shiny and beautiful and tastes great! Variations on this vegetable soup recipe!

Because it has a short list of ingredients, this easy homemade vegetable soup is easily customizable! Add any quick-cooking vegetables or other spices. Here are a few ideas:

  • chickpeas or kidney beans instead of white beans
  • Canned tomatoes: Add 15 ounces can diced or fire toasted
  • Spinach, kale or Swiss chard: add a few handfuls (chopped or sprouts) in the last 5 minutes
  • Frozen Butternut Squash: This soup works with frozen since it’s already partially cooked! Add it with the green beans
  • Pesto: The basil pesto adds great flavor to the broth! Add 1 to 2 tablespoons with the broth

This garden vegetable soup recipe is easy and satisfying! It’s a homemade vegetarian version of a canned soup that’s infinitely tastier.


  • 1 medium yellow onion
  • 1 Red pepper
  • 2 celery ribs
  • 3 medium carrots
  • 3 Garlic cloves
  • ¼ cup olive oil
  • 1 tbsp garlic powder
  • 2 teaspoons dried basil
  • 1 teaspoon every dried oregano and dried thyme
  • ½ teaspoon ground turmeric
  • 8 cups (2 liters) Vegetable soup
  • 1 1/2 at 2 teaspoon kosher salt to taste
  • Freshly ground black pepper
  • 1 ½ cups frozen green beans
  • 15– 1 ounce can of kidney beans (Cannellini, Great Northern or other), drained and rinsed
  • 1 ½ cups frozen peas
  • 5 ounces pasta spirals (approx. 2 cups dry)

  1. Chop the onion. Dice peppers. Thinly slice the celery. Peel the carrot and cut finely into circles. Chop the garlic.
  2. In a Dutch oven or large saucepan, heat the olive oil over medium-high heat. Add onion, bell pepper, celery, carrot and garlic and sauté 5-7 minutes until onion is translucent.
  3. Add the garlic powder, dried basil, oregano, thyme, and turmeric and stir. Continue cooking for about 1 minute.
  4. Add vegetable broth, 1 1/2 teaspoons kosher salt, frozen green beans, drained and rinsed kidney beans, and freshly ground pepper. Cook.
  5. Add frozen peas and pasta and continue to simmer until pasta is tender, about 10 minutes. Remove from the stove and let cool for a few minutes. Taste and add additional salt if needed.
