Want to make a killer pan? Look no further. Here’s your new target: this Simple wok sauce! Stir-fries are often listed as an “easy dinner” concept, where you can just mix up everything you have and make a quick sauce on the go. But often when Alex and I try this method, the sauce evaporates completely or doesn’t taste good at all. Lo and behold: the best wok sauce! This has a fantastic blend of savory, spicy and sweet flavors and has just the right silky texture when you put it in the pan. Problem solved.

Six Ingredients of this wok sauce

A skillet is a concept like potato salad: there are a million ways to do it, and every mom has her best version. There’s no exact way to make a stir-fry sauce, but what you want is this: a balanced umami (savory) flavor with tart and sweet notes to balance it out, and a slightly thick texture that covers all the veggies . . All you need is 6 ingredients (plus water), so this sauce is super easy. I hope you have everything in your pantry! The ingredients for this sautéed sauce are:

  • soy pasture (or tamari or coconut aminos; see below)
  • rice vinegar
  • Sugar
  • miso
  • cornstarch (or arrowroot powder)
  • garlic powder
  • Water

What is miso? Should I keep it in my fridge?

Well, the answer to the second question is yes! Be sure to keep miso in the fridge. Miso is a Japanese fermented soybean paste rich in nutrients and a savory flavor. This is the actual definition of umamithis is the so-called fifth taste that is savory. It’s the flavor that makes meat and cheese so filling.

You can find miso in most major grocery stores near other Japanese ingredients. There are many types of miso, all with different flavors: red, yellow, and brown. There are also many brands of miso. Each type and brand of miso has a slightly different flavor. We used yellow miso for this stir fry sauce and it tasted amazing.

Two soy sauce substitutes

We used regular soy sauce in this wok sauce. We typically use regular soy sauce instead of the low-sodium sauce because you want your sauce to fully flavor the stir-fries. Soy sauce isn’t gluten-free and full of soy, so what if you avoid those ingredients? There are two great substitutes for soy sauce:

  • Tamari (gluten free): Tamari is also made from soy: it is specifically a type of Japanese soy sauce. The biggest difference between soy sauce and tamari is that tamari contains little or no wheat. Check the label to be sure! In terms of flavor, tamari is slightly less salty than soy sauce, so you may need to add a bit more to taste.
  • Coconut amines (gluten and soy free): Dealing with a soy allergy? No problem. Coconut Aminos are soy-free and taste very similar to soy sauce. Substitute coconut aminos for soy sauce at a 1:1 ratio, but it’s slightly less salty and you may need to add a little salt to taste.

Here’s how to use this easy stir-fry sauce

This skillet sauce works really well in a skillet: you just need to know a few things before you add it!

  • The amount is enough for a stir-fry with 4 servings. It coats all the veggies and proteins but doesn’t have much excess.
  • Add the sauce AFTER the veggies are cooked: Turn off the heat! Here’s the important part. Cook all the vegetables, then turn off the heat. Then add the sauce and stir until it thickens. When you add the sauce to the hot pan, it all evaporates leaving no silky sauce.

Make an easy stir-fry with this sauce

With this oil-free skillet sauce, you can make an easy skillet using the principles below! Here is a list of cooking times for sautéed vegetables and alkaline proteins.

Proteins: cook them in advance

  • 14 ounces tofu
  • 1 pound shrimp
  • 1 pound chicken
  • Cashew
  • Edamame (cook 3 to 5 minutes, below)

Add the protein at the end when all the veggies are cooked.

  • ¼ cup Soy sauce (or tamari or coconut aminos)
  • 6 tablespoons the water
  • 1 tbsp rice vinegar
  • 2 tablespoons Sugar
  • 1 tbsp miso
  • 2 teaspoons cornstarch (or arrowroot powder)
  • ¼ teaspoon garlic powder

  1. Whisk all the ingredients together until you get a smooth sauce. Store in a covered container until ready to use or use immediately.
  2. Use to add to a stir-fry with a 4-serving stir-fry like Tofu Skillet or Cauliflower Skillet. It also works with 1lb of protein like chicken, shrimp, or beef. Cook all the veggies, then turn off the heat and add the sauce, stirring until thickened.
