First, let’s start with the definitions. Steak and fries are thick, wedge-cut french fries that are baked or fried with skin. Unlike fries, steak fries have a larger, chewy potato filling and are wedge-shaped. They can be baked or fried and made with Russet or Yukon Gold potatoes. We prefer the roux because it gives a soft center (unlike Yukon Gold, which is creamier). What you need for this steak and fries recipe:

What should be considered when buying potatoes?

Here are some things to look for when shopping for steak fries:

  • Use red potatoes. Boiled potatoes are great for steak fries because they make the best moist inside. Save some Yukon Gold for these Parmesan Potato Wedges.
  • Use medium to large potatoes. We prefer medium-sized potatoes because they form smaller wedges: and you get more out of each potato. Large potatoes work too!
  • Look for unblemished potatoes. You can’t cut the blemishes and dark spots off the potato, or it’ll take a big chunk out of the wedge! So try to find potatoes with an unmarked exterior.

The most important skill you need for steak fries? How to cut potatoes into wedges. It might seem easy until you look at this potato and try to figure out how to start. Here’s what to do:

  • Halve lengthways. Lay the potato on its side and use a large chef’s knife to cut it in half lengthways.
  • Cut into wedges. Place the cut side of the potato on the cutting board and cut in half again to create wedges.
  • Cut into wedges. Lay each potato quarter cut-side up, then slice down the center of the quarter to form a corner. That’s 8 wedges per potato.

How to make steak fries: some tips

Restaurant-style steak fries are usually fried. But frying at home is hard to master (and messy). For a homemade recipe, the easiest way is to cook them in a hot oven. It’s just as delicious and they come out hot and crispy. Here are some tips for preparing steak fries (or jump straight to the recipe):

  • Preheat oven to 450 degrees. High heat is best for crispy exterior.
  • use parchment paper. Parchment paper helps with cleaning. Don’t use a silicone baking mat: it doesn’t make the potatoes crispy enough on the outside.
  • Opt for fine sea salt. We’ve found that fine salt makes fries easier to season: kosher salt tends to go away. But you can go kosher if that’s all you have!
  • Roast until tender, about 35 minutes. Turn after 20 minutes.

  • 2 books (2 large resp 3 medium) Red potatoes, cut into them 8th wedges each
  • 2 tablespoons olive oil
  • 1 teaspoon every garlic powder and onion powder
  • ¼ teaspoon ground black pepper
  • 1 teaspoon fine sea salt
  • Honey mustard for serving

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Cut the potatoes into wedges. Toss them in a bowl with the olive oil, garlic powder, onion powder, black pepper, and half the fine sea salt and toss until completely coated.
  3. Line two baking sheets with parchment paper. Lay the wedges on the sheet in a single layer. Sprinkle the remaining ½ teaspoon fine sea salt on top.
  4. Bake the tops for 20 minutes. Remove the baking sheet from the oven and flip the potatoes with a fork. Place the baking sheet back in the oven and bake for a further 15 minutes until golden and crispy. Enjoy immediately with honey mustard or another sauce of your choice.
