A good cornbread recipe is a home cook necessity, as we’ve discovered. Cornbread is easy, goes with almost anything, anytime, quiet satisfied. Here’s one of our favorites: this one Cornbread in the skillet recipe! It’s great in a cast iron skillet, although you can use any type of ovenproof skillet that comes in handy. Bake it and it’s got just the right thickness, moist crumb, and savory sweetness you want in a good cornbread.

What’s in a Skillet Cornbread Recipe?

Cornbread is a quick bread made from cornmeal that has roots in Native American and Southern United States cuisines. There are many versions of this concept, and whether it’s sweet, savory, thick, or thin often depends on the region of the United States. This recipe is rather salty, slightly sweet.

Cornbread is often baked in a cast-iron skillet, which makes it crispy on the outside and soft on the inside. Most cornbread recipes have similar ingredients and methods. (Here we took some inspiration from Toni Tipton-Martin’s Jubilee cookbook: which we highly recommend!) Here are the ingredients you’ll need:

  • Yellow Wheat Flour
  • all purpose flour
  • granulated sugar
  • baking soda, baking soda, and kosher salt
  • eggs
  • whole milk
  • Salted butter

Use a cast iron skillet or other ovenproof skillet

Why is cornbread from the cast iron skillet so delicious? You can preheat the pan beforehand and it gets very hot to get deliciously crispy on the outside and fluffy on the inside. Here are some notes on the oven type:

  • A 9 or 10 inch cast iron skillet is best if you have one. Some people like to preheat the pan for the entire oven preheat time to give the bread extra crispiness. For our method, we only need 5 minutes to melt the butter, but you can preheat longer if you’d like.
  • Or any ovenproof skillet will work! Just make sure it’s about 9-10 inches in diameter to get the ideal loaf thickness.

  • 1 ¼ cup yellow wheat flour
  • 1 cup All-Purpose Flour (or 1:1 gluten free flour)
  • 3 tablespoons granulated sugar
  • 1 tbsp baking powder
  • ¼ teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 eggs
  • 1 ¼ cup whole milk
  • 6 tablespoons salted butter (or neutral oil)

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a medium bowl, combine cornmeal, flour, granulated sugar, baking powder, baking soda, and kosher salt. Beat eggs and milk until smooth.
  3. Place the butter (cut into chunks) in a 9-inch or 10-inch cast iron skillet or other oven-safe skillet. Place in oven until butter melts, about 5 minutes.
  4. Gently remove the pan with a hot pad. Brush the melted butter onto the sides of the pan. Then pour it into the batter and stir until fully combined. Put the batter back into the preheated pan.
  5. Bake for 20 minutes, until puffed up and a toothpick comes out clean. Let cool for a few minutes, then cut into pieces and serve.
