It’s beyond simple, uses a few ingredients we always have on hand, and makes great lumps (which is harder to achieve with a standard granola recipe). Here’s what you need:

  • Creamy peanut butter
  • Honey
  • vanilla extract
  • Cinammon
  • pimento
  • Kosher salt
  • Old fashioned oatmeal

How to make granola in pieces: some tips

If you’re like us, you like a little texture in your granola. Chunks, clusters, lumpy granola: whatever you call it, it makes eating that much more interesting. Here’s what you need to do:

  • Spread it out in an even layer, then bake for 10 minutes. Use your fingers to tap on it. Then cook for 10 minutes without stirring.
  • Turn, press down and cook for another 10 minutes. We like to use a fish spatula to flip it (sounds weird, but it’s great for scooping!), but you can use any flat spatula. Some parts need to stay together. Then pat it in with your fingers in an even layer.
  • Roll over with a rolling pin and let cool completely. Take a rolling pin out of the oven and gently roll to push in even more. Then let cool completely for the pieces to form.
  • Break it with your fingers. Break into chunks no matter what size you like!

Vegan variant

You don’t eat honey? No problem: You can replace the honey in this recipe with pure maple syrup or agave syrup. Keep in mind that honey will help get very lumpy as it has a very sticky texture. The resulting peanut butter granola might not be as lumpy as the pictures, but it’s just as delicious!

  • ⅓ cup creamy peanut butter
  • ½ cup Honey*
  • 2 teaspoons vanilla extract
  • 2 teaspoons Cinammon
  • ½ teaspoon pimento
  • ¼ teaspoon kosher salt
  • 4 cups Old fashioned oatmeal

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large bowl, mix together the peanut butter, honey, vanilla extract, cinnamon, allspice, and salt. Add the oatmeal and mix well until fully combined.
  3. Line a baking sheet with parchment paper. Spread the mixture in a single, even layer on the baking sheet and press down with your fingers. Cook for 10 minutes, then flip with a flat spatula (some pieces should stick together, press together with the spatula). Bake an additional 7-10 minutes until golden brown – it still has some moisture and will crisp up as it cools.
  4. Take out of the oven. If desired, gently roll a glass or rolling pin over the oatmeal layer a few times to make it clumpy. Let cool completely for 45 minutes. Next, separate the granola into clumps or individual pieces. Store in a jar for up to 1 month (ensure it is completely cool before storing).

Remarks
