This frosting comes together in minutes and uses only 5 ingredients (plus salt). After you mix the ingredients, there may still be miso chunks that won’t dissolve: that’s okay! Just try to make it as smooth as possible. What you need for the miso glaze:

  • 1 at 1 1/2 delivers high-quality skin on salmon fillets, wild caught whenever possible
  • Freshly ground black pepper
  • 2 tablespoons light or yellow miso
  • 2 tablespoons Soy sauce (or tamari or coconut aminos)
  • 1 tbsp rice vinegar
  • 1 tbsp sugar (or maple syrup)
  • ¼ teaspoon Spicy Sriracha Sauce
  • ¼ teaspoon kosher salt
  • Optional side dish: sliced ​​spring onions, sesame

  1. Let the salmon rest at room temperature for 20 minutes.
  2. Meanwhile, make the miso frosting: In a small bowl, whisk together the miso, soy sauce, rice vinegar, sugar, sriracha, and kosher salt (miso may have a few lumps depending on texture, which is correct).
