How to make a lemony caper sauce: some tips

This Lemon Caper Sauce is so easy, just melt some butter and cook for 3 minutes. Here are some quick tips on the method:

  • Use salted butter. It has a significantly stronger flavor than unsalted.
  • Add a whole clove of garlic and then remove it. This buttery sauce is infused with garlic instead of being sautéed with it. Just add a clove of garlic and throw it away after cooking: no need to chop!
  • Use lemon juice and zest. The use of zest gives it a depth that juice simply doesn’t have. We like to use a micro plane for zest: it’s quick to get out.
