Topping them with a sweet and tangy blueberry compote and that’s all you can do not to scream. Wow! on the first bite (we have). This recipe was inspired by a blueberry crop we picked in Michigan, and it tastes just as good as it looks. You can also use frozen berries if you don’t have fresh supplies. Here’s what to do!

This Lemon Blueberry Pancakes recipe is based on our Fluffy Greek Yogurt Pancakes. After all, who needs buttermilk! We always have Greek yoghurt in the fridge, so prefer buttermilk. Greek yogurt pancakes turn out just as flavorful and creamy! There’s enough lemon to stand out with a tangy citrus note. What you need for these pancakes:

  • all purpose flour: You can also use half and half all-purpose flour and whole wheat flour : You may need a little extra milk
  • baking powder, sugar and salt
  • egg
  • milk
  • greek yogurt
  • lemon juice and zest
  • neutral oil such as grape seed oil, organic rapeseed oil or organic vegetable oil
  • blueberries: fresh or frozen

Here’s the biggest mistake people make with blueberry pancakes: They add the blueberries to the pancake batter. What is wrong with that? Well, there’s a better way to add berries to pancakes. How do you add berries to pancakes?

Here’s a question: Do you need to thaw frozen blueberries for pancakes? Good news: no! Frozen berries do not need to be thawed as they thaw as part of the cooking process. Thawing blueberries can be a messy job, and once thawed, they can get purple streaks in baked goods and pancakes. So just put them in frozen: it works like a charm!

Want a vegan twist on this Lemon Blueberry Pancakes recipe? Here’s what to do to make it plant-based:

  • Replace milk AND Greek yogurt with almond milk. Use 1 cup total of almond milk, then add a few more dashes to reach a pourable consistency.
  • Use a flax egg for the egg. A flaxseed egg is simply flaxseed and water combined into a gel used in vegan cooking. It acts as a binder like a real egg.

  • 1 cup all-purpose flour*
  • 2 teaspoons baking powder
  • 3 tablespoons Sugar
  • ¼ teaspoon kosher salt
  • 1 big egg
  • ¾ cup milk
  • ½ cup whole greek yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons Lemon peel
  • 2 tablespoons neutral oil (vegetable or grapeseed oil)
  • 1 cup Blueberries, fresh or frozen
  • To serve: blueberry compote or maple syrup

  1. In a medium bowl, mix flour, baking powder, sugar and salt.
  2. In another bowl, whisk the egg, then stir in the milk, Greek yogurt, lemon juice, lemon zest, and neutral oil.
  3. Add the wet ingredients to the dry ingredients. If the batter is too thick, stir in an additional drop of milk (the consistency of each brand of yogurt is different).
  4. Lightly butter a pan and wipe off excess fat with a paper towel. Heat pan over medium heat. Pour the batter into small circles, and then place the blueberries on top of each pancake. Bake pancakes until bubbles burst on top and bottom is golden brown. Then turn them over and cook until done. Repeat with the rest of the dough.
  5. Serve immediately with blueberry compote or maple syrup.
