We whipped up a pitcher the other day and we can confirm that this is one of the best ways to use this culinary flower in your kitchen! But if you use enough, it has a floral undertone that can make a recipe irresistible: like this lavender lemonade! (Try it in a fruit chip too: it’s mind-blowing!) Alex and I couldn’t get enough. Here’s what you need to craft it:

All you have to do is make a simple lavender syrup and then mix it with freshly squeezed lemon juice and water. It is so easy! Most of the time it’s hands-free: it takes about 30 minutes to make a batch.

You can use fresh or dried lavender flowers to make lavender lemonade. Dried lavender is easier to find and will last up to a year in a cool, dry place like your pantry. But do you have access to fresh lavender flowers? If you have some in your garden or found some at a farmers market, you can use those too! You only need the flowers, not the sprigs of green leaves.

How to make easy lavender syrup

The only part of this lavender lemonade that takes effort is making the special easy syrup! Simple syrup is a sugar syrup made up of equal parts water and sugar: giving that delicious lavender flavor. It only takes a few minutes, then let it sit with the flowers for 20 minutes. Here’s what you need to know about making plain lavender syrup:

  • Use equal parts water and sugar. The recipe uses ½ cup for a pitcher that makes about 4 cups. If you need more, double the recipe.
  • Bring to the boil with the lavender, then remove from the heat and leave to rest for 20 minutes. This allows the flavor of the lavender flowers to penetrate the syrup.
  • Filter and cool. Filter the weed and voila! The syrup can be stored in the refrigerator for 1 month.

The best way to squeeze lemons

Making lavender lemonade involves squeezing a lot of lemons! You only need 3-4 lemons for this little 4-cup pitcher. But make a full pitcher and it can do a lot on your fingers if you don’t have a good juicer. Here are the best juicers we recommend:

  • First choice: a citrus press. This type of juicer is super efficient and can extract every last drop of lemon juice. This is the juicer we use.
  • Second best choice: a portable juicer. The next best juicer is the ridged top type (similar to this one).

Mix this simple lavender syrup and lemon juice with cold water and you’re good to go! Complete lavender lemonade. Add it to a tall glass with some lavender or rosemary leaves and it’s beautiful. Here we’ve served it with clear ice for an even more stunning look.
