This healthy banana bread uses a blender to combine oats, banana, eggs, spices, and maple syrup into a delicious 100% whole wheat batter. By using only oats, it’s also naturally gluten-free! Best of all, it tastes delicious and filling, but doesn’t leave you with a sugar crash or make your stomach feel great.

The slices of this banana bread are literally one of my favorite “treats” lately, and it’s made with all the healthy ingredients. It’s literally like eating a banana and oatmeal, with a drizzle of maple and a drizzle of oil on top. Our toddler Larson swallows it too, spread with some almond butter!

To make bananas ripen faster, store them in a brown paper bag and fold the top over. You can also add some already ripe bananas or other fruit to the bag to increase the amount of ethylene gas that helps with ripening.

The riper they are, the better: you can even use bananas that have turned black! Why do you need ripe bananas for banana bread? The texture and softness of the bread is highly dependent on the ripeness of the banana. Using an unripe banana gives a flat-tasting bread.

  • 2 cups mashed very ripe bananas, almost black (approx 4 big or 6 few)
  • 2 large eggs + 1 egg white (or 2 flaxseed eggs, for vegans)
  • 6 tablespoons neutral oil (sunflower, vegetable or grapeseed oil)
  • 6 tablespoons pure maple syrup
  • 1 tbsp pure vanilla extract
  • 2 teaspoons baking powder
  • 2 teaspoons baking powder
  • 2 teaspoons Cinammon
  • 1 teaspoon pimento
  • ½ teaspoon kosher salt
  • 3 cups Oatmeal and more for garnish

  1. Preheat oven to 375°F. Use neutral oil or coconut oil to grease a 9″ x 5″ loaf pan.
  2. Mash bananas and measure out 2 cups.
  3. In a large blender, beat together the bananas, eggs and egg whites, oil, maple syrup, vanilla, baking soda, baking soda, cinnamon, and kosher salt until smooth. Homogeneity. Then add the oatmeal and blend again until a very smooth batter forms (if using a large blender you may need to blend 1 cup at a time; our Vitamix is ​​extra large and can handle everything at once).
