How to Make Grilled Snapper: Basic Method

Foil does not need to be used with grilled snapper. You can throw it straight onto the grill grates! You can use the same method for other white fish like grilled cod and grilled tilapia, or even salmon. Here’s what you need to know about heat level and cooking time:

  • Wait for the fish to come to room temperature. This takes about 15 minutes and helps it cook evenly.
  • Grill over medium heat or 375 to 450 degrees. Medium high gives a perfectly cooked piece of fish.
  • How long does the grilled red doily need to be cooked? Cook skin-side down for 3 to 4 minutes, then skin-side up for 3 to 4 minutes! The fish is ready when it begins to scale when pulled with a fork. Another measurement method is to read 130 degrees Fahrenheit with an indoor thermometer. Be sure to insert the thermometer directly into the thickest part of the fish.
  • How to prevent fish from sticking to the grill? You don’t even have to oil the grates. The secret: wait until the fish is cooked enough to come off the grill, Then go back. Don’t spin it too soon!

Grilled Red Snapper is a great summer dish! This is the perfect way to season and grill this white fish.


  • 1 Crush redfish fillets (preferably wild)
  • 1 tbsp olive oil
  • few 1 teaspoon kosher salt
  • 2 teaspoons smoked paprika (also called paprika)*
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ⅛ teaspoon celery seed

  1. Preheat a grill to medium-high heat (375 to 450 degrees Fahrenheit).
  2. Bring the fish to room temperature for about 15 minutes.
  3. Pat the fish dry with a clean towel. Rub with olive oil and sprinkle with kosher salt and freshly ground pepper. Mix the smoked paprika powder, garlic powder, onion powder, and celery seeds in a small bowl, then pat over the fish.
  4. Grill the fish over indirect heat for 3 to 4 minutes until it pulls away from the grid. Flip and cook an additional 3-4 minutes until fish is tender and just cooked through (internal temp is 130-140F).

Remarks

*If you can’t find it, you can use sweet paprika. But the smoked paprika brings out the best flavor with a hint of smoke.
